  • Well we only ate 8 of the burgers and not all the sausages either! So got bits and bobs left. Used the pepper in a chopped salad in the end not soup but not sure what I will have with the butternut squash. May head over to the recipe thread to find inspiration.

    So far in terms of meal plans then the next 2 days are set. I am at home for the next 2 weeks so I have to find dinner as well as tea. Going for:

    Monday lunch - Packet pasta, Monday tea - chilli and rice (kids at nursery all day and eat there)
    Tuesday lunch - possibly picnic in the park, Tuesday tea - toad in the hole (to use to sausages from today) with mash and mixed veg.

    Hi there :) I really need to join in with this, money is going to be extremely tight over the next month or so, so i'm gonna try and be good. There is me, OH, DS age 5 and a dog.

    i'm not actually to bad on using up fresh items, however my cupboards have stuff thats been there for months and just never get eaten also my freezer needs a bit of stock rotation :) so tomorrow i'm gonna go through and list everything. Maybe we can inspire each other :) i deffo need to get some dried mixed herbs and onion powder as we use these in loads of dishes ie spag bol, stews, shepherds pie etc. Other than that though I think I can do some major cupboard and clearing in the next few weeks.

    So for tea tonight

    OH is finishing off a bag of scampi from freezer, I will have a battered fish fillet (currently have 3 left so if I have one tonight that will leave 2 for me and OH to use another night as DS wont eat them) will serve with home made chips and corn on cob.

    DS not eating tonight cause hes not well :( will make him something if he fancies it later.

    Thanks Annie once I finish my month challenge I shall join in with it.

    Today I had the packet pasta for dinner and chilli and rice for tea. Looked at the sausages for toad in the hole there seem to be rather a lot of them. I may cook the rest off too and eat them cold wednesday. Picnic in the park for lunch so just sarnies and salad I think.

    Still got that bloody butternut squash though! Determined not to waste it!!

    makes lovely soup (can be frozen for later) by itself or with red peppers if you have any, or tossed in olive oil, sprinkle of herbs and roasted or grilled....yummy:D

    roast Butternup squash risotto is my signature dish - roast the chopped squash first and it makes it sweeter. Use Philley rather than loads of butter to make it creamy, can use flavoured cheese if liked or add, horseradish sauce, wholegrain mustard or pesto to ring changes.

    I also can't fault frozen veg to save money, as the best vege prices come in larger amounts and a 2 people, ie me and my OH can't get through it all quickly enough before I have to soup or roast the limp and lifeless vegetables instead of throwing away.

    Well for dinner today went to mums so didnt worry about that one :)

    For tea is pasta bolognese with cheese :) yum yum there is loads of sauce so will do tea tonight and dinner tomorrow probably a few freezer portions for work too :) i've done a list of my freezer stock nearly had a heart attack with how much stuff there is would it be ok to post my list on here?? dont want to highjack your challenge :) xx

    Thanks for the butternut squash ideas. I have risotto rice in the cupboard but I have never made a risottto before. Never been a huge fan of 'sloppy' rice. I am willing to have my mind changed though so I may well give it a go tomorrow.

    Today for lunch I am having beans on toast. All stuff already in. For tea the kids are having chicken dippers, waffle and beans for tea and we are having singapore chicken noodles. Will take one of the 3 chicken breast packs out of the freezer, use one today and then use 2 tomorrow as I plan to make chicken wrapped in parma ham for us tomorrow (kids eat at nursery).

    Run out of fruit again so am gonna nip up to the fruit and veg shop and stock up. Wednesdays they give slimming world members a 10% discount so I need to take advantage of that. Tomorrow though I have to go to Tesco to take my nanna shopping as she can't get there on her own. I do need milk but I shall keep spending to a minimum.

    I too am using up as much as I can before buying anymore.I made an inventry of my freezer and stuck on the front of the door and it reminds me of how much stuff I have already in stock I worked it out that I have the makings of at least three to four weeks dinners and lunches in there so very little shopping for me over the next few weeks.It will be a sort of make do and eat scenario in my house I think. plus I am getting a great aversion to going to supermarkets at the moment as the prices seem to be going up almost daily.So its batten down the hatches and eat what I have .Will only be buying fresh milk and bread(although I do have quite a store of ryvitas so they may be used instead) and of course fruit and veg.so hopefully I can cut right back on my shopping budget.
