Going to assume that you need 10 main meals and 10 lunches.

ready meals - lunch for yourself for three days?

portion of beef casserole done in sc that wasn't very nice, needs pimping up somehow!!
1 hm frozen curry (enough for 1)
    1 chicken & mush pie (for 1 - reduced!)

    Centre pieces

whole chicken- this needs to stretch a long way; my mother used to make one do four days for four people. Roast it and then take off the meat you need for the next day. Freeze the rest of the meat and put the carcass onto boil for HM soup base.
pack of bacon - - chicken and bacon pasta bake with the penne? treat yourselves to a bacon and tomato sarnie for break fast one morning this weekend?
one portion of mince (to make one meal) - would it go to two meals if you stretched it with vegetables and made say a lasagne and a chilli?
2 chicken fillets - stir fry one day with veggies and noodles, rice with chicken and chorizo another day? Or use one with the thai curry sauce?
1 piece of frozen fish - fish pie, with white sauce, add peas and possible other veggies. I would usggest a mashed potato topping.
6 pieces of chorizo - one with rice ad above, one to go with HM pizza?
    mozzarella ball - HM Pizza

    Flavourings
    lemon juice (jif style)
thai red and green curry paste - so a curry or two are on the cards

1/2 small box stuffing - make stuffing balls to bulk out the chicken roast
    lots of herbs & spices
    stock cubes
    vanilla essence
    cocoa powder
    cooking choc
    cupcake cases
    icing sugar

    Padding

4 tortilla wraps - use these with some of the cold cooked chicken and the pepper for lunch over the weekend?
frozen puff pastry - OH great - could be used instead of potato for fish pie
    a few frozen chips
lasagne sheets - lasagne with half the mince and veggies
instant noodles - chicken stire fry
rice - spanish rice with chicken and chorizo, chilli and curries
    spaghetti
one meals worth of penne - chicken and bacon pasta bake
Couscous - more chicken, with a tomato sauce and a few apricots as a sort of tagine.

    Core ingredients
    milk
10 eggs (although I don't like omelettes, but love pancakes so maybe will have these a few times?!)
    butter
    stork
mayo - tuna and mayo sarnies
plain flour, sr flour & bread flour
8 sachets yeast - one for the pizza
    kidney beans - chilli
    3 tin toms
    passata
    caster sugar
sultanas - for thwe weetabix cakes
    dried apricots
    brown sugar

    veggies and fruit
    bag of peas
    apples
    1/2 red pepper
    carrots
    2 red onions
    garlic
    2 tomatoes
    1/2 courgette

    pudding and treats
few scoops of vanilla and another few scoops of strawberry coulis icecream
    custard - ready made
    1 creamed coconut sachet
pastry case - sweet - do you have enough lemon juice to make a lemon meringue pie with 2 or three eggs?
    jelly to make up
weetabix (own brand and not v nice - thought i would try brownies i remember seeing!?) try weetabix loaf or teabread here https://forums.moneysavingexpert.com/discussion/3136590

    Breakfast
    sugar puffs
    2 boxes cheerios
    readybrek
    rice snaps

    Lunches
8 rolls (will need these for hubbies pack lunch next week) - is he working 3 or 4 days?
Tin Tuna and mayo for tuna sarnies

    Hi

well yesterday all went to plan for breakfast cheese toastie using up stale bread and some cheese left from pasta bolognese, then for lunch left over pasta bolognese, then DS had to be admitted to hospital :( I mentioned earlier he hadnt been well but he developed some little spots (none blanching) I was scared! turns out they think he has an infection somewhere nothing to serious so have let him home for the day we are going back at 7 for more antibiotics.

So for tea last night bag of crisps :( then breakfast from the canteen for today, I did have more left over pasta bologese for lunch today, not decided on tea yet will see what happens when we get back from hospital will post later :) xx

  • Hi shelvis,

As your thread has dropped down the Old Style board I've added it to the main Store cupboard challenge where you'll get lots of help and advice from others in the same postition.

    Good luck with your challenge.

    Pink

I didn't want nor ask for that. I realise you are well meaning but this was my personal challenge where i wanted to blog my own stuff just a place for me to ramble I cared not if noone else ever posted in it. I will never find my freezer list now and be able to keep track. Can it be undone? I just wanted to set myself a challenge then I would join the storecupbard one when I had finished.

I didn't see a problem with having my own diary - there are lots of people who do their own debt diary isntead of using the generic ones so why should this be any different?

OK, one of the things that instantly leaps out at me is to use the puff pastry rolled out and cut into circles to make little tarts. Then, chop up some chorizo, red onion, tomato and a bit of garlic, mix with a little tomato passata and put in the middle of each circle for a bit of a Mediterranean plate pie. Definitely agree with reading the rubber chicken thread, as it's amazing how far you can make a chicken go.

Ooh, while I remember, I made a lasagne a while back using pancakes but it was cheese and bacon rather than tomato and mince. Wonder if that would go down well as it is really rich and filling.

You could make the chicken fillets stretch to feed more by mixing it with some chorizo and rice, tomatoes and other veggies (plus some spices) to make a jambalaya. That always goes down well here.

    HTH, and best of luck.

White fish goes really well with a thai green curry, use your creamed coconut sachet and some peas, serve with rice.

Pimp up your stew by making it a pie :D adding cheese to the crust (or just below the crust) will make it tastier.

Fajitas with leftover roast chicken, peppers, onions, and tomatoes, bit of cheese, and spicy rice.

Chorizo stew with tomatoes & beans (smoked paprika is fab in this)

Mental blank apart from this now, but its a start :)

I agree with you shelvis, I struggle sometimes to keep up with the bigger threads would have been nice to have a smaller more personal thread.

Anyways DS is much better today if just a little tired :) ended up with chippy for tea last night, terrible I know :o, I was so tired that i just couldnt consider cooking so since first starting this challenge i have purchased:

    Mixed herbs 99p
    cheese £1.96
    bread 79p
    chippy tea £4.80
    hospital canteen breakfast £3.85
    Mayo £1.49

    total £13.88

I am gonna set a target of £100 to run to the 15th May, which I think is easily achievable (hopefully :o) this will include any take aways etc

I will post my freezer list shortly :)
