    I love butternut squash!
    Cut in half and scoop out seeds, then cut squash into 2" sections and peel off the skin (like peeling spuds)
    Brush with a little oil and bake at 180 degrees for about 15 mins
    Then pour over cream with some some sage and salt & pepper mixed in . bake for another 10 mins or until soft
    Can add a little bit of a mild or soft cheese on top if desired.

    This is surprisely filling and only needs a salad or something light with it.

    Also look up hugh F-W (river cottage guy) receipe for stuffed B/N Squash - that's my next time receipe.

    ETA:
    You can also bake the seeds and eat them as a snack, can't remember how I did it last time, but I added some spices to give a bit of a kick.

    Also sympathies re your doggie, I lost my old boy over 3 yrs ago and I'm nearly in tears again now just thinking about it.
  • As you can see from my earlier post we had a glut of squash and I made loads of soup, everyone who came around went home with a container full. During the summer I had a glut of courgettes and found recipe for courgette and ricotto lasagne. I made a few of these using squash and they were very nice but after eating so many courgette lasagnes during summer I really coulden't face much more. Will get some cream today and try this recipe. Its great having allotment if you remember not to grow too much stuff. Using up a mountain of leeks and parsnips at present, am making Jamies parsnip and ginger soup today and also making leek and turkey pie. Thanks

    I don't think anyone ate anything yesterday. Noone felt like it after having to say goodbye to our very poorly dog :(

    Try butternut squash risotto (one of my favourite things to eat, ever), or, for something sweet, butternut squash tart (a version of pumpkin pie made using BNS)

    I've been to the supermarket :o I spent £5.80 on 6 litres of milk (one for the fridge 2 for the freezer) and 2 loaves of Hovis bread (2 for £1.50, no cheaper bread on the shelves)
  • I also feel a bit of a failure as I am about to go shopping.Not really because I have to but to make my life easier.
    I started this challenge on sunday after buying quite a bit of meat on saturday I knew I would be able to do it but I was aware at the time that we had hardly any fruit and only enough potatoes for two meals.
    I did an inventory of the freezer and have done another one this morning and I have meal planned up until 26th january so I'm pleased with that.
    We do eat alot of fruit so I feel that DH and DD will soon get fed up with my "ways" as they call them if we go another week without fruit!!
    So on that basis I'm going with a very small list that I will definately keep to.DD also needs a bit of baking stuff but I've got £4 of Dr.Oetkar(bad spelling I know!) vouchers so I will be using them.
    I am also going to the farm shop this afternoon whilst I pick the car up from its MOT and I will get a sack of potaoes as we can get about 14 meals out of one(and yes I have counted this is another one of my ways!!) for £3.50.
    So last weeks wages saved on food paid for DH car tax £125,and this weeks money saved will pay for my MOT hopefully not too much.
    So I am glad I did this challenge and will be continuing.
    EDIT just had a phone call from DH the car needs a new tyre,I spoke too soon,never mind.

    Hugs to you wendywitch :grouphug: I know how hard it is as also had to have my dog put to sleep on Monday. He was 13 and had him from a pup. Missing him so much and the house feels empty without him.

    Have used up a few tins out of the cupboards - sardines in sauce, tin peas and a tin of creamed mushrooms - (quite nice on toast for lunch).....not all together !

    I have my first ever small joint f gammon in the slow cooker, put it in with an onion, 2 carrots, 3 celery sticks and some mixed herbs. Smells wonderful. Hubby will be having gammon, egg and chips and I will be having the stew (with added soup broth mix) and gammon cut in :) Fab and all from the freezer/store cupboard :D
    Loan finished Sep 2010 - HSBC CC - WAS £750 now £0! Natwest CC - WAS £1600 now £100 - Overdraughts to be worked on! WILL be debt free by mid 2011!!!

    Left over quiche, left over chicken and left over rice :)
    Good ol store cupboard days!

    Are we meant to post what we've had for dinner? I'm always a little embarrassed as mine's never very exciting :o

    Well, today I had left-over liver and bacon (my mum gives me parcels of it when she cooks it as my DD's don't like it so I don't buy it), boiled potato and sprouts.
