If you take the breasts off you could do chicken breast stuffed with finely diced veg (use some bread to make a stuffing)
With the legs you could do a cicken a la king thing with the peppers and the chicken meat and rice, and use the roux mix again for the sauce.2024 Challenges- Grocery Budget (January £0/£300)

Quick way to make a roux type sauce......
1/2 pint milk.
Walnut sized knob of butter
Level dessert spoon of cornflour.
Salt and pepper.
Herbs i.e. parsley
Put the cornflour in a cup and use a little of the milk to mix it to a thinnish cream, add the butter to the remaining milk and bring to the boil, when its at boiling point gradually stir in the cornflour mix stirrning well, take off the heat and add any herbs and seasoning. If it goes lumpy whisk with a small ballon whisk and it will break up the lumps
This is the mix they use for the instant sauces you buy in packets with chemicals added for flavour. Most of them contain cornstarch which is cornflour used as a thickening agent.Was 13st 8 lbs,Now 12st 11 Lost 10 1/4lbs since I started on my diet.0 -
Just an update on my freezer challenge: over the past few days I've managed to use up:
one garlic naan bread
one portion of onion bhajis
the remains of a bag of king prawns
one pack of steak mince (although a portion of mince and veg pie has gone back in the freezer in its place)
three bananas (now a banana cake)
half a bag of HG tomatoes (now soup)
one pack of 2 chicken legs
I can even see the freezer shelf in places now!
EllieA - if you haven't already thought of uses for the whole of your chicken, how about a nice chunky chicken soup: you can use the bones to make a stock, then use that to cook some of your veg and add any leftover chicken scraps at the end. If you use lots of veg and potatoes then it can be filling enough to be a main meal, perhaps with some bread and butter to dip in it. :drool:

i will be lurking about as i have had a quick stock check today and have (amongst other things) ;
60 tins chopped tomatoes
20 tubes tomato puree
12kg porridge oats
32 tins deodorant
10 bottles bleach
5 bottles floor cleaner
36 different moisturisers
12 boxes cup a soups
6kg dried spaghetti
oh dear i really can't resist a bargain !!!
i am going to only shop for absolute essentials until i can defrost one of my freezers.
bit tricky as i have fussy kids who all like different and i am doing slimming world !
i have just made a fabulous lentil chilli in my slow cooker , only problem is i can't leave it alone :rotfl:0 -

i did this with stewed apples i pureed, mix it into a cake mix, minus the eggs with a hint of cinnamon and some sultanas..... mmmmmmmmm delish! lol - i think i may make some tomorrow!

I am planning on a use it up month, to bring down November's grocery spend. I have quite a lot of food in stock, so instead of doing larger food shops I will only be buying exactly what I need for the month. GC budget is set at £270 but I am hoping to come in way under this.November NSD's - 70

Last night, when i couldnt sleep after watching human centipede, i devised myself a meal plan to use up all the batch cooked meals in my freezer. . . and then when i went to post it on here, the formatting didnt work, so here it is - all written nicely, and afterwards i will pop a list of my cupboards (photos will follow - just have to upload them to my LT) with what will be used!
Motivation i think its called

Need some kitchen advice quickly
I want to make a nice hearty, Halloweeney warming meal tonight.
I have-
Pork & Apple Sausages
Normal sausages
Potatoes
Swede
Carrot
Onion
I have a few cans of cider and was thinking perhaps make a stew/casserole but all the recipes I find say stock cubes needed and its what I don't have and shops are now shut!
Any ideas what I can make? My bf is bunged up so thought lots of veg would do him good as well!

Pork and apple sausages with a bit of cider chucked in, after browning them in a frying pan, mashed potatoes, carrot and swede and an onion gravy.Felines are my favourite
