  • I did day 5 and lucy is fine she had two teeth out at a small cost of £141:eek: and then they said they want to see her again next week!!
    Anyway day 6 today and all planned.
    I've also done a plan up until thursday(pay day) and then the freezer will be just about empty so I can defrost that aswell so a good job will be done aswell!

    well, day 6 and 7 of the challege did not go well!! BUT as I was re-arranging the cupboards and freezer AGAIN to fit more stuff in then deciding just to stack tins in the corner of the kitchen i decided enough is enough. Cards put away again (it was payday friday so thought I would treat us with dh's pay!! :P) so now I think we can live on £10 a week just for some milk and fruit. The £10 for this week is in my purse and that is all I will take out!

    Was supposed to do a big shop today but could not be bothered. The OH made a fry up for dinner and used some frozen fruit that ive had in the freezer for ages to make a smoothie with some disaranno put in. Lovely. Seems like he is doing this challenge too. ;)

    May I add something I made a few days ago? It was my first store cupboard meal as a newly minted lover of cooking so it was a big deal for me but may not be so impressive for others!

    I had very little out of the store cupbioard to work with here so.....

    I took 3 wholemeal pitta breads and placed them in the grill for a couple of minutes whie I prepared the toppings.

    I then spread sun-dried tomato paste on the pittas, tomato puree would do at a push - then as toppings put slices of fried meat-free bacon, a tin of chopped tomatoes (minus juice), chopped onion, grated mature cheddar cheese, oregano (Italian seasoning would do nicely) on top and baked in the oven for about 12 minutes. Yummy.

    All this scrummy cooking I'm doing is making me put on weight.....

    Had some plain yoghurt which was unopened but the date said Mid January. Opened it up and it was fine so have made some muffins with it.http://www.cooks.com/rec/view/0,1956...225200,00.html

    Does anyone know if i can do the same things with eggs that are 3 weeks past their date? Am thinking of chucking them as i dont want to get or give anyone else food poisoning.

    Hmm eggs I guess could have alot more bad bacteria in them. I think I would throw them skaps. Unless you crack them open and they smell okay?
    I have had many Light Bulb Moments. The trouble is someone keeps turning the bulb off :o

    skaps - I'd try the water test with them - put them in a bowl of water - if they float, they've gone off; if they sink, they're probably OK, at least to use in cakes. To be extra safe, crack each egg individually rather than adding directly to your muffin mix - you'll smell it if the egg's gone off, and won't run the risk of ruining the rest of the mix.

    Well we are trying to be money saving and rather than spend spend spend we are saving every penny we can and this is the first month we have stuck to our budgets but to save a bit more (this saving is becoming addictive) I want to use up what is left in my cupboard. I need 10 meals and have some cash left over (would like to spend no more than £50 if possible:o)

    This is what I have any ideas for the 10 meals for 2 adults and 2 children (small aged 3 and 5);

    2 packets of pitta breads
    half a bag of frozen peas
    8 frozen sausages
    half a bag of aunt bessie roast potatoes
    3 quarters of a bag of broccoli and cauliflower
    1 bag of has browns
    1 tin of red kidney beans
    1 tin of chopped tomatoes
    1 jar of passata
    spaghetti (1 pack)
    pasta (3 bags)
    rice (2 bags)
    1 tin of baked beans
    6 eggs
    1 bag of frozen sweetcorn
    2 packs of tortilla wraps


    I have lots of spices and herbs in the storecupboard.

    I can see a toad in the hole with broccoli and cauliflower, but you don't get much left over with that for the next day.

    Get a kilo of mince for about £4 or £5, and you can make chilli. You may need to buy a couple of sweet peppers. Have it with rice one night, and reheated on top of tortilla chips with grated cheese another. You could make your own with the wraps or just buy Mr T's for 25p a bag.

    You could also use the wraps to make enchiladas- just use the chilli mix, wrap in tortillas add tin of chopped tomatoes/some passata(i don't think the whole thing but I don't use it so I don't know) and top with a bit of grated cheese. Cook in the oven for about 20minutes. Delicious!
