I have a little of this, please can you give me an idea of quantities?:):A
Also what foods would I serve it with, I'm guessing there's quite a mushroomy flavour?
Weezl x
You'd only need a wee bit, a dash. Here's a recipe from the BBC website just for an idea.
As for what to serve it with - anything really! Scallops, veal, maybe venison, um, maybe it would be nice served with chicken wrapped in parma ham, whatever. Maybe not for topping your shepherd's pie though0 -
I've nver tried truffle oil but I would imagine it would be good drizzled over a mixed mushroom risotto for a semi-posh veggie dish. Sesame oil is good in anything Chinese-y - how about a Chinese style chicken and sweetcorn soup as a starter?
I mostly use smoked bacon when making a chicken and red wine casserole, which would be lovely on a chilly day (perhaps served with truffle mashed potato?). I also love smoked bacon for bacon sandwiches, but I don't think even I'd be able to eat all of what you've got in a sandwich!Back after a very long break!0 -
Ground rice - good for shortbread, but only a tiny bit otherwise too gritty
I also use it in my onion bahji recipe and I have made a topping with it for a savoury mince dish, I can post the recipe if you're interested, it's sort of morroccan with lamb mince, spinach, spices and toasted coconut. I'm sure you could add it to lots more cake and batter type recipes to replace some of the flour.

You guys are great! Thanks so much!
Thriftlady, the first batch of brownies are in, I tripled everything, and if the mix is anything to go by... OMG! thank you!
Weezl, your ideas are great, do you happen to have the recipe for the gluten free torte thing, as we try and make as much gluten free as possible so that would be fab! Funnily enough I did a flirty fondue on our valentines menu, went down well! Loving the sound of the red mullet! Will check your links later!
PP, thank you for the link, pancetta sounds good and will go through the thread later when i get chance!
ESMF - the sponge sounds great too! Can you link the recipe at all, or can i just google it? Like the idea of freezing ingredients too to make later.
Angel - I had thought of the truffle oil mash, but its a really strong taste so will have to be careful, hadnt thought of dusting things with the cocoa ;lol! Might attempt muffins!
Swan I have made almond tart, but never used the ground rice in it, so will try that thank you. Almond fingers sound good to.
Hippygirl, the chips sound like a great plan, might try wedges as a starter or something, and the croutons is just genius!
CCP! again genious! the casserole sounds perfect, complimented with the mash.
Ciderwithrosie, cant wait for that recipe, especially as lamb is coming into season so prices are lowering slowly.
You are all great, I am now fired up with inspiration, instead of seeing pound signs on the shelves with stock I couldnt think how to use!
Thank you all so much for taking the time to post.

glad you've been given so many good suggestions
I'll have a look & see if I can find the recipes* I used for Bakewell & the almond fingers & the proportions, too much almond essence can be a bit overpowering!

Far Eastern Pie (exotic shepherd's pie)
Preheat oven to 190 C/375F/gas mark 5
Tip 3oz dessicated coconut into 30 fl oz of milk and simmer for 5 mins. turn off and leave on the side. wash 1lb fresh spinach and trim any stalky bits. Blanch in boiling salted water for 1 minute until wilted. Drain well pressing out all the water, chop roughly. melt 1 oz butter in a large frying pan/saute pan - stir in 2 tsp ground coriander, 1 tsp cinnamon, 1tsp tumeric and half tsp of chilli powder and cook for 30 secs. crush 3 garlic cloves and grate an inch of fresh ginger into the frying pan and cook for another 30 secs. Brown well and break up 24 oz lamb mince in the frying pan, add the spinach and juice of half a lemon. tip into a shallowish baking dish. Put 1.5 oz ground rice in a pan and strain over the reserved coconut milk (save the dessicated coconut). Bring to the boil, stirring all the time and then simmer for 5 mins until thick, season to taste with salt and a little chilli powder. pour over the mince and spread to cover. Melt 1oz butter in a small pan and stir in the reserved drained coconut. spoon over the top of the pie and bake in the oven for 40-45 mins until nicely browned. It says to serve with a salad. I notice it doesn't have any onion in it - could add some if wanted for extra flavour.
