I havn't been shopping now for 3 weeks and my freezers and store cupboards still look pretty full. I usually do this after Christmas living off my stores but I think I had stored far too much. It's difficult to resist a bargain and so I was overstocked.

I've been on 'use up' this week and not been to the shops since last weekend. Been using various stuff from the freeze. Today I've pulled out stuff to make lasagne for tomorrow, chilli for dh and ds for tonight, except ds is now going out, so he can have his Monday. left over portion of pasta bake for me with hm ratatouille also from freezer. Made some turkey stock from freezer into pea soup with peas from the freezer.

Just about to start and bake banana (from freezer also ) and date loaf. The freezer must be getting emptier, but it's a slow job. I don't want to run everything out, just need to have less in there for defrosting purposes and to temporarily house stuff over the festive period. Also use up some stuff that has been there for a while.

I used up some leftovers for our dinner today:
I melted 1 tsp butter in frying pan, added some chopped potatoes and onion for a few minutes, added a cup of chicken stock and a pack of green beans and brought to the boil.
Poured into casserole dish, topped with breadcrumbs and baked it in the oven until breadcrumbs darkened.
Of course I had to taste it as soon as it was done - and I was surprised at how nice it was!
Left half of it for hubby for his dinner and taking the other half to work for ait.
That sounds absolutely delicious! I'll definitely be trying it.

ETA: Forgot to say thank you for posting your recipe! Thanks!:T

Have done a little clearing out....used wrinkly parsnips I bought 2 weeks ago to roast, and didn't...with some carrot, onion, wee drop of ground cumin and a stock cube (have loads of these as hardly use them since starting to make my own stock) to make pot of soup. Just need to blitz and will do for tomorrow's lunch.

Bought big bag of carrots yesterday for, I think, 29p, so peeled them all, chopped the smaller ones and froze and grated the rest and yes, also in freezer. I am fed up with carrots going black after 5 minutes

Batch cooked some steak mince using up some squishy vine tomatoes in the fridge, last of the frozen peppers and the last of my home grown onions and another stock cube.

Divided into 2, one lot will be for lasagne, with some basil & oregano added and the other one I have added 2 home grown chillies and half a tin of kidney beans for chilli. (obviously rest of beans destined for freezer)

Used 4 chicken breasts (bought yesterday) to make curry, some of which I will have tonight and OH will have his steak.

Just need to clear up the kitchen now after all that activity!!
  • Got back on track last night and used up a stray portion of chilli (which I thought was spag bol) together with some left over chicken caccatore sauce (no chicken!), a leek and half a courgette from the fridge and some ham cubes I'd frozen earlier in the week as OH told me he didn't need lunch for 2 days and the ham would have gone to waste. Serves with pasta - it was very nice!

Used some raspeberries in my muffin baking yesterday too...

Bought the salmon fillets for tonights tea, but intend to do the crumble for tomorrow nights dessert at OH's parents.

Another week and hopefully I will have some room in the freezer!!!!

Good luck all for the week ahead.

    Hello all.
Sainsbugs delivered me part of someone else's shopping and when I rang told me to keep it, so now I need some ideas..... for 3 tubs of value mushrooms :o

I don't like mushrooms on their own - or mushroom soup - so what can I do to use them up?

Can I chop and freeze them, or do I fry them off first? Or will they go horrid?

Got some chicken (had casserole with mushrooms tonight), sausages, fish pie mix, fishcakes and lots of veg and spices, rice, pasta etc. No mince in the freezer unfortunately and not fit enough to go to the shops just yet.
working on clearing the clutterDo I want the stuff or the space?

    .

I have frozen them sliced, on a baking tray before, then popped into freezer bag once frozen, and thrown them into stews/bolognase etc from frozen, they work ok. Don't think would be nice on their own like this, but they work in stewy things

Didn't bother blanching just bagged them up and froze them, sure they will be OK, won't be in there for too long as I use carrots a lot.
