I used up some leftovers for our dinner today:
I melted 1 tsp butter in frying pan, added some chopped potatoes and onion for a few minutes, added a cup of chicken stock and a pack of green beans and brought to the boil.
Poured into casserole dish, topped with breadcrumbs and baked it in the oven until breadcrumbs darkened.
Of course I had to taste it as soon as it was done - and I was surprised at how nice it was!
Left half of it for hubby for his dinner and taking the other half to work for bait.
For tea I have defrosted my parents a lamb casserole each that I cooked a couple of weeks ago and will serve it with some brown rice.
Me and hubby will be having a risotto (to use up the last of the rice) with onions, peppers and celery in it.
I will then be making a rice pudding - but will add some evaporated milk to make it extra creamyDream of being mortgage free....

Tonight we will be having beef casserole to use some of the random bits left over from the beef pack.
Tomorrow we will be having Roast Chicken, which in turn dictates chicken of some sort on Monday.

I need chickens! I need to divert via a co-op by thr sounds of it? Dare I go out in this today? Absolutely lashing down here with thunder & lightening.
We are on the last 2 breasts of chicken and not really any other meat in at all?
Also no chopped toms except for half a tin that is in a tupperware. :eek:
I know im going to have to get some stuff ordered.Although apparently there is a 10er off a 50 shiop at waitrose in telegraph today, so might use that.

Afternoon all.
Revolting day, isn't it? The only good thing about this weather is that it will save me some money - I was intending to go to the annual food festival that's on just down the road from me (providing the wind hasn't blown the stalls into the next county, anyway :rolleyes:), but I really don't fancy it now. I think I'll stay inside with a cup of coffee instead - it might be less fun, but it's cheaper and much drier!
Tonight's dinner is completely store cupboard/freezer based, and uses up a pork steak, half a tin of tomatoes and half a tin of chickpeas.
Thanks for the chilli beef soup recipe, lynzpower - that sounds so lovely it's going straight into my folder of forum recipes!Back after a very long break!0 -
I completed the store cupboard last night and it is not pretty:eek: Excluding the fridge and all the spices and sauces and stuff it runs to 4 sides of A4. I don't think I will bore you all by listing it as a lot of it is the usual tins and baking stuff.
I have masses of white pasta penne to use up as OH bought a huge bag of it when we were marathon training and it has sat there ever since. I am not mad on pasta but do like the H)me Pr1de pasta bake sauces but at £1.45 they are off the menu for a while. Does anyone have a pasta bake recipe (no meat or fish) they could share? I have gallons of tinned toms and beans and all the usual garlic etc.
Used up frozen fish, the last 2 veggie sausages and some mushy peas last night. BIL coming for tea tonight so I will make a vat of chilli using up some frozen peppers and the mountain of quorn mince. Not gonna tell him its veggie until after he's eaten it:p
All this talk of twinks hobnobs has got me drooling and I will have to make some tomorrow:drool::drool:
probably already used this up but I use pasta penne (we didn't like it with macaroni) when making the macaroni cheese recipe from Economy Gastronomy, you can just miss out the bacon or add in something else.My self & hubby; 2 sons (30 & 26). Hubby also a found daughter (37).
Eldest son has his own house with partner & her 2 children (11 & 10)
Youngest son & fiancé now have own house.
So we’re empty nesters.
Daughter married with 3 boys (12, 9 & 5).
My mother always served up leftovers we never knew what the original meal was. - Tracey Ulman0
