I'd happily send you a bit of cake if I could work out how to stop it getting squashed and stale en route. If I get anything chocolately for Christmas you can definitely have, though - I can't stand chocolate. _pale_Trying to spend less time on MSE so I can get more done ... it's not going great so far!

Ok, this one is fail proof, just follow the instructions.
2 cup light brown sugar
1 cup vegetable oil, do not use any other especially not olive.
mix together well then add
4 eggs or 5 if they are small
2 tea spoons vanilla
small tin of crushed pineapple or liquidise pineapple (juice too)
3 1/2 cups of grated carrot (about 6 carrots decent sized)
mix in really well then add all at once
pinch salt
1 tablespoon baking powder
1 tablespoon bi carb
3 1/2 cups of plain flour
1 tablespoon cinnamon
1 tea spoon nutmeg
mix all well. should be quite a wet mixture.
pour into lined tins loaf tins work quite well
should make 2 two pound loaf tins or 2 sandwich tins
cook on about gas 3 or 4 electirc 170
45-50 mins do skewer test.
for frosting
8oz phili cheese low fat, full fat as long as it is plain.
6oz butter or marg
2 tea spoons vanilla
3 1/2 cups of icing sugar. more if its too wet for you
the frosting will ice two sponges together and then go all over. if you dont want that much icing, then just do half the quantity.
the sponges will freeze no probs if you wrap them properly
1 cup = 8oz
this is a really great recipe, i sell the cakes. try it in fairy cake tins and reduce cooking time. great for kids with a dollop of frosting on top.

No kids here but I'm more than able to gobble it all up myself.:D If it turns out ok I'll give half to my sister. Well, maybe a third ... or just a slice!:p

Thank you both for those 2 yummy carrot cake recipes, a much better idea to use up the 2 kilos of carrots I have than the boring soup I had planned:D I will make this on Sunday when I have my cooking marathon planned.
My DH seems to have acquired a sweet tooth at the grand old age of 39He has never bothered about puddings and cake before but keeps asking for them now. I enjoy baking so it is ok by me and also helps fill out his packed lunch and I can blame my expanding waistline on the baby;)
Quorn provencale bake for our tea tonight using up a bag of quorn pieces, tin of chopped toms and 2 dodgy looking garlic cloves from the bottom of the fridge. Might also use up a tin of apple pie filling and have apple crumble and ice cream for pud:DSave £10,500 - £2673.77 - 25.5%
