Help with lots of milk

    Hi all

    I have 8 pints of milk that need using today (semi-skimmed) I know I could freeze it but would like to make things with it that I can then freeze - any ideas please ?

    Rice pudding
    Custard
    Blancmange
    Semolina pudding
    Tapioca pudding

    Lots more ideas here; I'll merge this later to keep ideas together :)

    if you make a plain white sauce and freeze it in portions, you can unfreeze and make cheese/onion/savoury sauces (or add booze and sugar for Christmas!) as you need them.

    Thank you so much for those ideas everyone. I wasn't sure if I could freeze white sauces etc. but will make up a batch today and freeze and some lovely rice pudding in the slow cooker I think in preparation for the cold snap.
  • I have a recipe for paneer (Indian cheese) which is similar to sarah*a's cottage cheese recipe. I've made this loads of times, then added it to curry dishes, to spinach to make saag paneer, to chick peas, lentils in dahls etc.

    2 litres of whole milk
    2-4 tbsp lemon juice

    Pour milk into a heavy based pan & slowly bring to the boil. When it starts to boil & rise up, add the lemon juice & stir with a wooden spoon. The milk will begin to curdle & separate into pale yellow liquid & small white solids (the curds).This should happpen within a minute or so. If not, add some more lemon juice & keep stirring. Remove from heat & pour through some muslin placed over a large bowl or saucepan. Tie the cloth & hang it from the tap for at least 10 minutes. Next place it on a board for 30-40 minutes with something heavy on it. The longer you leave it the better. Cut into cubes & away you go x

    What i can do with 4 pints of milk that are on their way out? It's skimmed milk and i don't want to chuck it!

    Make a rice pudding and freeze it? If you add a can of evaporated milk you will get that lovely sweet creaminess that tinned rice pudding has.

    People say scones are good to make with it not sure if it has to be full fat or something though. So really this hasn't been of any use to you at all!
