  • Pink-Wings I new it was some sort of fridge cake and fifteen was the only one that came to mind.

    Another thing i want to make are scones which i would love to have with jame and colted cream. I cant (obviously) get cornish colted cream here so what alternative could i use?

    Just to let you know I saw Clotted Cream in Woolworths/Safeway yesterday about $4.50 for a tub......in case you need it for the next Royal Wedding!

    That sounds lovely! Why don't you ask your guests what their favourites are and then make them in miniature? You can't go wrong that way and at least your efforts won't be wasted.

    Otherwise I would stick to simple sandwiches using good quality breads and fillings. If you have some small ramekin dishes why not make some mini-trifles as well serving as scones / Victoria sponges with cream and jam?

    I did an afternoon tea on Sat and I made mini quiches in a fairy cake tin, they came out very nice :)

    Simple sarnies with your guests' fave fillings sound good to me - you could even cut the crusts off to be extra ladylike! :rotfl:

    Cakewise, scones with jam and cream and Victoria sponge sound great too, if you've got the time and inclination you could do some fancy cupcakes - there are recipes galore if you Google - or even some butterfly buns, prettied up with different coloured buttercreams made with a few drops of food colourings. Carrot cake muffins with cream cheese frosting look fab too if you pipe the frosting on top in a swirl and dust with cinnamon.

    If you're after something non-cakey with minimal effort, Eton Mess might be a good idea - whip up some cream, mash up some strawberries and raspberries (keep some whole for decoration) and before serving mix together with broken up meringue - lovely and summery and very British!
