Pavlova is easy, but you need to make the meringue really really stiff so it keeps it shape in the oven.
Easy cheesecake recipe:
Crush about 8oz digestive biscuits and stir into about 2-3 oz melted marg.
Put the mixture in the bottom of a lined 7-8" deep cake tin and press down hard with a potato masher.
Put in the fridge for 20 mins or so until it sets hard (or freezer if you are in a hurry!)
Beat together 2 tubs (500g) of mascarpone cheese, the zest and juice of a lime and about 2-3 tablespoons of icing sugar. Put that on top of the biscuit base and put back into the fridge to set.
Remove from the tin and put on a serving plate, then tip a tin of blackcurrant pie filling over the top.
