    Hello I haven't been on the forum for some time but I'm back now and glad to see everyone's doing so welll!!

    I made this up as I went along and it tastes amazing :D.

    Thought Id share it with you guys here ....

    VEGETABLE LASAGNA.

    THE VEGETABLE BASE

    Put In a frying pan with some fry light ...
    1 large Leek chopped.
    3 handfuls of chopped mushrooms.
    1 small can of butter beans.
    fry all together until softened.
    Then add a vegetable stock cube with
    1 and a half cups of water .
    some herbs, garlic & salt and pepper.
    Leave to simmer for 15 mins.
    In a blender place ....

    one can of chopped tomatoes
    1 teaspoon of cream cheese (low fat)
    some herbs , salt and pepper.
    now BLEND.
    Now start to layer the ingrediants in a baking dish , like this ...

    A LAYER OF VEGETABLES
    A LAYER OF LASAGNA SHEETS
    A LAYER OF TOMATO MIX (making sure you cover the sheets well)

    REPEAT.

    THEN TOP WITH A LAYER OF 28g OF GRATED CHEESE.

    SERVE WITH RICE

    ;) It tastes really really creamy and makes enough for 3 meals so I have two tuperware boxes full in the fridge for the next two days .

  • Sounds good Mirry! I also make my own veg lasagne. I saute garlic, onion, mushroom, courgette, peppers & add a tin of chopped toms & herbs. I layer this with lasagne sheets, and top with a tub of quark & a HEA of cheese and thin sliced cherry tomatoes. It is amazingly tasty!

    My red day;
    Brekkie; free sausage, bacon & egg
    Snack; hard boiled egg & 2 pints of SF squash
    Dinner; steak, carrots, asparagus & a small portion of oven chips :o will also have a glass of wine.

    Got a job rejection letter this morning so nearly went off the rails again but went to the cinema to see A Christmas Carol in 3D so happier now :)
  • Oh I might try that lasagne next week. Got to meal plan for the week later.

    Today I have had

    Bowl of fruit n fibre with milk (HE a & B)
    banana
    Alpen lights (HE B)
    eggs, bacon and mushrooms
    beef cassesrole and veg for tea
    Sins - a bit of flour to thicken casserole and some tommy k with my bacon.

    Yay!

    Hope everybody is having a good day. Lost 2lbs today and got my 1.5 stone on the SW website (it's body-optimise but I hate the initials BO so I'll say SW!).

    I've been reading what people have said about scales and have decided not to get on mine again until next Saturday (I'll fess up if I cheat!). At the moment I still weigh myself every morning.

    I'm also going to go and weigh myself in Boots sometime this week to get an "official" weight. I might keep this to myself as it's bound to be more than my early morning weigh on my scales! Eventually I think I might make the Boots one the official one. What do you think?:confused:

  • I think somebody posted the story of Mrs I've Beensogood just lately - it's about how easy it is to consume loads of syns without realising. Well this one is about the same lady and her consumption of drink syns:-

    Mrs Ive Beensogood (Drinks version)

    Mrs I’ve Beensogood was truly disappointed when she got on the scales this week to find she had gained a pound-she really had been so good! Every healthy extra was weighed or measured, every syn counted and she was just about ready to give up when her consultant asked her about her liquid intake.

    “What is she talking about” Mrs I’ve Beensogood thought, but in order to prove the point to her consultant that she had been 100% on the plan this week she started to tell her which liquids she had drunk the day before.

    Plenty of water of course, as the daily recommended amount of liquid is 2litres per person and topped off with some lovely herbal teas (she didn’t want to waste her A choices on too much milk!) With breakfast she had an Actimal (1.5 syns) as she had seen on TV how good they were for you and liked the idea of being healthy inside as well as out! They were so small, how many syns could they be!

    At work someone has used all of her sugar free squash so just this once she had a few glasses of “normal blackcurrant Ribena” (4 syns per 180ml) throughout the day. At lunch time someone was celebrating their birthday so the boss took them to the local pub. Mrs I’ve Beensogood did not want to use up her syns at lunch time so she avoided alcohol and just had a glass of fresh orange juice (3 syns).

    In the afternoon the girls wanted to go to a local coffee house to get some drinks to perk them up so Mrs I’ve Beensogood, knowing how high in syns milky coffees can be ordered a small light blended iced coffee, no cream and certainly no flavours-she was food optimising after all! (5 syns)

    After work she played with the children and made dinner-slimming world chips for the whole family! With dinner the children wanted their juice cartons instead of water so Mrs I’ve Beensogood opened the pack and gave one to all the family, including herself-well organic apple juice is full of vitamins and minerals for me, she thought! (5 syns)

    After the children were tucked up in bed and the babysitter was happy Mrs I’ve Beensogood and her husband when to the local bar for a drink and a chat. Mrs I’ve Beensogood had looked up the syns of wine and spirits before she left and she knew that a large glass of white wine was 6.5 syns and a shot of vodka was 2.5 syns so she was happy with her choices for the evening. Mrs I’ve Beensogood didn’t notice that a large glass of wine in this bar was 250 mls (9.5 syns) so after 2 of those she had actually had 6 more syns than she realised. The same, unfortunately with the vodka, this bar served 35mls as standard (4 syns).

    This means during the day, Mrs I’ve Beensogood actually drank 18.5 syns on non alcoholic drinks and 23 syns on alcohol-a total of 41.5 syns for the day!!!
    I let my mind wander and it never came back!
  • Hello everyone - I used to post on here a few months ago but after a stressful time I fell off the SW wagon and have only just managed to get it together enough to re-join. My problem is that I have LOADS of weight to lose and I have a huge appetite. I also eat if I am upset or worried. I know that SW works because I have seen all of the people on her and friends and acquaintances losing well on it but I just can't seem to get my head around it. My consultant is not very good - I don't mean that to sound nasty, but she has only ever been a stone or so overweight at her heaviest and I would say that 85% of the people in the class have a similar weight history. Ther is certainly no-one in my group who has more than 3 or 4 stone to lose and I have about 12 stone to lose:o It is really daunting going every week and I know that I am wavering about going next week already. I find I can be good all day but about 4pm I start to get hungry and seem to eat from then on - all kinds of rubbish! I have purged the house of all high syn foods and only have wholemeal bread and fresh fruit etc, but I still seem to struggle. I have just read this back and know that this sounds really self-pitying and defeatist but can anyone think of anything to spur me on a bit? I find exercise difficult at my weight and am too embarassed to go out anywhere socially.... Anyway sorry for the long read! Does anyone know if Marion (Retiredlady) still does slimming world - I used to love reading her posts as she was in a similar weight range to me?
