Morning all!
I'm feeling so positive today, went to Argos and got me scales, not bad for £15, gonna weigh myself in a bit cos I want to do it naked and I've got someone from the childrens centre coming round at 10am so dont want to be caught in the nud :rotfl:
Havent had chance to have brekkie yet, so gonna quickly have a yougurt.

I made some tuna pasta yesterday, a massive bowl of it, I used 2 tablespoons of salad cream and 1 table spoon of mayo, say it come to 4 syns for the sauces, does that mean 4 syns per portion or say 1 syn per portion of therr are 4 portions DS1 has already devoured half of it :rotfl:

Bargain - a free 2g!! :rotfl:

Just been to Asda & found WW dessert whip thingys (tiny sachets which whip up to Angel Delight style) - only 2 syns each has anyone tried them? Bought the strawberry & chocolate to try (after WI tomorrow as need to save my syns!)

Astons Mummy - it'll be 4 syns per the lot. If you used 16 syns in the sauce it'd be 4 syns per portion!

Green day I love a good mushroom risotto or canneloni stuffed with cottage cheese & spinach! Failing that it tends to be quorn curries/chillies/spag bol/lasagnes (or baked bean lasagne/curry). Lentil dahl with bombay potato's? veggie Jambalaya? Mushroom stroganoff?
• curries/chillis/bolognaise I can make.

Do you have a recipe for risotto/lasagne/bombay potatos/Jambalaya & stroganoff?

Many thanks!

Syn free Lasagne (serves 4)
454g Quorn mince (or very lean beef mince at 2 syns per 28gms)
250ml passata
Mixed herbs and black pepper
1 red pepper, finely chopped
250gms mushrooms, finely chopped
1 large onion, finely chopped
Lasagne sheets (as many as you need)
454g tub virtually fat free natural cottage cheese
250g tub Quark
30g Parmesan
100g reduced fat Cheddar
(The Parmesan and RF Cheddar amount to 1 HEB per serving)
In a non-stick large pan, dry fry the mince until browned. Add vegetables, passata, herbs and black pepper, and cook until veg are softened.
Mix the quark, cottage cheese, Parmesan and Cheddar together.
Spray an ovenproof lasagne dish wih Frylight and layer the meat mixture, lasagne sheets and cheese mixture, finishing with a layer of cheese mixture.
Bake in a hot oven (180*c) for approx 40 minutes until heated through and topping is golden brown

Mushroom stroganoff
Quorn pieces with mushroom stroganoff:
(serves 2)
Schwartz mushroom stroganoff mix (4.5 syns on SW)
about 1lb of chopped mushrooms
chopped red or green pepper
chopped onions (1 large or 2 small)
150g Quorn pieces (more if you want)
milk and/or water to mix
In a large pan, fry the onions with frylight until they start to soften, then add the peppers and continue frying for a few minutes. Add the mushrooms and Quorn pieces, stir, then cover the pan and cook over a low heat until the veg is tender. Add milk and/or water to packet mix and stir until smooth, then add to the pan, stirring until it thickens.
As an optional extra add a tablespoon of mango chutney (syns!) and stir in.
Serve with rice or spaghetti.
(or easy mushroom stroganoff; chestnut mushrooms, chopped 1/4 onion, 1/4pt veg stock, 2tbs low fat creme fraiche - fry off the onions and mushrooms in frylight, add the stock and simmer till reduced, add the creme fraiche and heat through, serve with rice and sprinkle with paprika - easy peasy!!!)

JAMBALAYA
Serves: 4
Syns per serving:
Free on Green and Extra Easy,
14 Syns on Original
1 onion
1 green pepper
2 celery sticks
2 garlic cloves
568ml/1 pint Vecon
2 x 400g cans chopped tomatoes
1 teaspoon hot chilli powder
salt and freshly ground black pepper
255g/9oz long grain rice
300g pack Quorn pieces
198g can sweetcorn
4 tablespoons freshly chopped parsley
1. Roughly chop the onion, pepper and celery and crush the garlic. Place in a large pan with the stock, bring to the boil, cover and simmer for 5 minutes.
2. Add the tomatoes, chilli powder and seasoning to taste and bring back to the boil.
3. Stir in the rice, Quorn pieces and sweetcorn, cover and cook over a low heat for 15 minutes. When the rice is tender and most of the liquid is absorbed, stir in the parsley and serve.

potato risotto
serves 1 or more
SW free on green (Bacon is HEB)
1 onion choppped
Couple of cloves of garlic, crushed
500g new potatoes
Chicken stock made with bovril
peas
quark
1 HEB bacon per person (or quorn bacon or mushrooms?!)
1 HEA parmesan per person
Spray a pan with frylight and fry off the garlic and onions. Add the potatoes and keep moving them around until they start to catch and look they are doing. Now just trat it like a risotto - keep adding a slug of stock and stir regularly until it soaks in. Then add some more. When it's about done put your bacon under the grill and throw in the peas( I use frozen. Now take it off the heat and stir in a few spoons of quark to make it thick and creamy. Stir through the parmesan and crumble the bacon over.

Bombay potatoes
½ lbs potatoes peeled and diced
1 tin tomatoes
1/2 teaspoons salt
1 teaspoon mustard seeds
½ teaspoon chili.
½ teaspoon turmeric
½. teaspoon garam masala
bunch coriander
Spray pan with frylight then add mustard seeds when cracked, add the potatoes and spices, liquidise tomatoes and add. Cook on low heat until potatoes are soft, add coriander and serve.

Ok, so I had some of the pasta, there is easily another 4 portions left!
I'll count it as 1 syn per portion I have just to be on the safe side.
Although I reckon DS1 will want more when he gets on from school.

I am having salmon for tea, dont know wether to do it with rice or tatties,, hmm decisions decisions x
