Here's another one for you :

    Microwave clootie dumpling

    Ingredients :
    8oz plain flour,
    12oz mixed fruit,
1 cup white or brown sugar,
    4oz margarine,
    1 cup water or milk,
    1 tablespoon treacle,
1 teaspoon each of mixed spice, cinnamon, ginger and baking powder,
    2 eggs.

    Method:
Sift baking powder and flour, beat eggs.
Put sugar, water, marg, treacle, fruit and spices into a large pot and bring to boil, then turn down and simmer for 2 mins.
A allow to cool, add flour, mix well, add eggs and mix.
Line a microwaveable bowl with cling film and pour the mixture in.
    DO NOT COVER THE TOP.
C ook at full power for 10 mins.

Sorry, daft question but how much is a cup? I only have mugs so am not sure how much to use. My Nan made dumpling for years at Hogmany. her memory isn't what it used to be and she can't remember her recipe. She used cook it in a linen tea towel in a huge pan. It was massive.

Thanks, for that. My Nans recipe was nothing like either of those from what I remember but she has always been very slap dash yet her boys (now 50yrs old but still refered to as the boys) love her dumplings, steak pies, tablet etc..

Thanks Highland Lass - haven't tasted tablet for years, but will def. try these recipes out. (Forgets about the diet - did you know that in December all calories have a negative value? Well that's the opinion I'm going with!)

    Microwave Tablet
This is a traditional Scottish sweet - VERY sweet! It can be made the traditional way but is much quicker in the microwave.

(Instructions for 600watt oven - adjust timing for a more powerful oven)

    1 small can Carnation milk
    1lb caster sugar
    2oz butter

Place all ingredients in a large bowl and mix well
Cook on high for 12 mins - stir at 4mins and 8mins.
Remove from oven and add few drops vanilla extract
Beat hard with a wooden spoon.
Pour into a greased tray, mark into squares and cut when cold.
hi do i put it in the micorwave for 12 min ??

Yes, stirring every four minutes. You may need to cook it longer, sometimes mine take longer, sometimes it's quicker. But I would use 4oz of butter, it's much better like that. To add to another earlier question , for anyone who needs it in future, a small can of evaporated milk is 170mls
