    what about homeade macaroon bars? mmmmmmmmmmmm
    1 small potato - boiled until very soft (no salt in water)
    mash really well/put through a sieve
    packet of icing sugar
    and mix together until really really stiff, smooth out in tray until about an inch thick(you may need to use a rolling pin)
    leave overnight, cut into small squares or bars cover in melted chocolate and toss in roasted coconut,

    that and tablet delicious!

    I have tried doing a search several times but I'm having trouble finding what I need!

    There was a recipe on here a while back for some easy microwave fudge but I can't find my printout anymore. Does anyone know where it is? It may even be on the special occassions board for homemade christmas stuff but I just can't find it - gggrrrr!

    It's not fudge but there's recipes for tablet and toffee.

  • Europa have you tried the Microwave fudge recipe yet? i posted it a couple of years ago, and I make it each christmas, its yummy!
    look after the pennies and the pounds look after themselves.
  • Just in time to add to the Christmas excesses- and perhaps to make little bags for gifts. I've finally been given a recipe for tablet which works (after many, many previous disasters).

    As a bonus it is a microwave one so no standing by a hot hob for ages.

    Anyway:

    one small tin of evaporated milk (yes, evaporated not condensed)
    1lb caster sugar
    2oz butter
    • put the ingredients in a very large pyrex/microwavable bowl and stir well together.
    • Cook on high for 6 minutes.
    • Remove and stir until it is all the same colour
    • Return to microwave and cook for another 6 minutes
    • remove and leave to stand until it stops bubbling
    • Stir for approx 1 minute
    • Pour into a square (8x8 or similar) baking tin
    It's vital to make sure the bowl is a big one as it will expand and bubble up as it cooks.

    It's absolutely delicious and I'm so excited that I've finally made tablet successfully. In fact I'm so excited I may well eat all the evidence myself and very soon will be feeling like this_pale_

    Brilliant, thank you! I bought evaporated milk by mistake last week, what a quick and easy way to use it! Just to clarify, my tin is 400g, how much is in a small tin?

    just fished it from the bin - the one I used was a carnation 170g but the friend who shared the recipe said about half of a big tin would be fine also. I've just looked and my big tins are 410g so I guess somewhere between 170 and 200g or so would be ok.
