The thing with stuff like this, just like fudge is it is so sweet and rich you tend not to be able tom eat a huge amount at a time.
I have some yummy baileys/chocolate fudge made from a recipe off here I think (or it may be a nigella one lol). With good quality dark choc and the baileys kick it is so sweet and rich I keep it in the fridge and have a small peice when I need a sugar hit.
If I had a cheap bar of chocolate I might sit in front of the TV and eat the lot, but something rich like this I can be satisfied with a bit and make it last-so in a way more healthy as you space it out (at least thats what I tell myself rofl)

Is there any taste difference with the use of the evaporated milk? I have a good recipe I found online a few years ago (has good pictures...) which uses condensed milk and only time I've had problems with it is when I moved house changing from electric hob to gas!
