I've had a lovely evening in the garden.
Just come in and had to dive into bed as soooo cold in the house.

my recipe for an omelette Ames -

2 eggs - beat together, add 1 tablespoon of cold water, bit of pepper if desired and pour into a pre-heated frying pan (if non stick add a bit of lard/oil)

drag the edges as they cook to the center, till about 2/3 cooked, add any desired toppings - cheese, ham - then let cook for anothwr 2mins til cheese is melted.

gently shake pan to loosen omelette - if it sticks run a pallet knife around the edges and underneath.

fold over with fish slice, or as you slide it onto the plate.

devour!!! nom nom nom...

The cooking bit's fine, it's the mixing. Mum and dad always used to put milk in, but I've finally realised that's not the right way - the last one ended up having loads of extra eggs to make it up to the right consistency! So next time I'll try it without milk.
