    Bought a Co-op happy medium sized reduced chicken for £2... roasted and eaten tonight, I usually make a chicken/cous cous/salad meal second night... then am uninspired and freeze the rest of the meat... I did make chicken fajitas last week from one, so inspiration is attempting to return!

    Any ideas folks for my new chicken, mostly still there and only missing just slightly more than one leg?

    chicken sandwiches (make into coronation chicken, mayo, bit of curry powder, some currants/raisin/sultana. yum yum)
    Chicken stir fry, noodles, any veg, some chicken. black bean sauce is always good
    chicken and sweetcorn soup. strip chicken, make stock, add a tin of sweetcorn (creamed if you can find it), grate some ginger, maybe chop a chilli, add the rest of the chicken. Noodles or rice to bulk it up.
    Chicken risotto, make risotto, add chicken

    Ta misskool some excellent ideas there - loving the sandwich coronation filler!!!

    Last week with the leftovers we had mexican fajitas for lunch, then some chicken/avocado/parmesan ssndwiches, but I then lost hope and put the last bag of chicken meat in the freezer for a curry or stiry fry at some point.

    Must remember the chicken and sweetcorn soup, sounds yummy...

  • This is the first week I've done a meal plan, we started on Friday and even though it's only Saturday I'm proud to say we've stuck to it so far!!

    Friday
    Breakfast:- Cereal
    Lunch:- Chicken mayo sandwiches (plus dried fruit and malt loaf for DS)
    Dinner:- Fish pie (left over from previous week)

    Saturday
    Breakfast:- Cereal
    Lunch:- Scrambled egg on toast
    Dinner:- Jacket potatoes with cheese and beans

    Sunday
    Breakfast:- Cereal
    Lunch:- Tuna mayo sandwiches (plus as above for DS)
    Dinner:- Roast chicken with roast potatoes, stuffing, carrots, parsnips, peas and yorkshires

    Monday
    Breakfast:- Cereal
    Lunch:- Chicken mayo sandwiches (plus above for DS)
    Dinner:- Gammon, Egg and HM chips

    Tuesday
    Breakfast:- Cereal
    Lunch:- Tuna mayo sandwiches (plus above for DS)
    Dinner:- Spaghetti Carbonara

    Wednesday
    Breakfast:- Cereal
    Lunch:- Leftover Carbonara
    Dinner:- Chicken curry with rice

    Thursday
    Breakfast:- Cereal
    Lunch:- Egg mayo sandwiches (plus above for DS)
    Dinner:- Beef stew and dumplings

    I have to say that I do feel a lot more organised having done a meal plan and went shopping on Friday evening and only bought what we needed so only spent £20.85! :T Very pleased with myself as normally on payday we'll go shopping and spend at least £70 and come home with not a lot to show for it!! We did go to the butchers today to get the stewing steak for the stew and got a shoulder of lamb for next Sunday as well but it was a lot cheaper than getting it from Asda! Just have to hope that my enthusiasm and organisation continues long enough for it to become second nature!!:j

    Here's mine:)

    Today- was supposed to be the lamb stew below and roast chicken tomorrow, but OH wants to go out tomorrow afternoon so I'll make the stew today as planned and reheat it tomorrow when we get back and I'll roast the chicken today for tonight's meal:rolleyes: Leftovers will be used in OH's sandwiches plus another meal on Tues.

    Monday -Morrocan lamb stew with chickpeas (I'll freeze half of this), couscous
    Treacle tart and cream

    Tuesday- Chicken croquettes (leftovers recipe from The River Cottage Cookbook), rice and salad

    Wednesday- Smoked mackerel, baked potatoes and salad.

    Thursday- Brown rice with vegetables and cheese

    Friday - Spaghetti bolognese

    Saturday- Pizza, blackberry and apple pie

    Sunday- Lamb stew,(from the freezer)

    Another idea, maybe: chicken & bacon pasta. Add a little cream and a handful of frozen peas, serve with a sprinkling of parmesan. My paella tonight also has leftover chicken in it - works fine!

    This is my meal plan for this week:

    Sunday: Roast Chicken, Carrots, Peas, New Potatoes, Gravy
    Monday: Chicken Pasta Bake and Salad
    Tuesday: Salmon Puff Pie with New Potatoes and Broccoli
    Wednesday: Moroccan Chicken with Couscous
    Thursday: Chilli con Carne with Baked Potatoes and Salad
    Friday: Sausage and Tomato Pasta
    Saturday: Takeaway Night!

    For lunches I will be making Tomato Soup, Corn Chowder and Corned Beef Pasties.

    There are some lovely sounding ideas on here... and I am going to 'borrow' some :D

    I am getting in a bit of a rut with our meals so I am going to my cook book collection and vow to make 1 new dinner next week, but so far this is my plan.

    H/made chicken curry and rice
    H/m vegetable or chicken Enchilladas with salad
    Mexican Chicken and veggies
    Spicy pork casserole, wedges and broccoli
    A 'New' Lamb dish
    Vegetable or Beef (pre frozen) Chilli and rice
    Spanish Chicken (pre frozen) mash and carrots

    I have a chicken in the freezer for next weekend so it will be rubber chicken all the following week LOL

    Me too... but I bought a big hardback "Good Housekeeping Cook's Collection" in the Works the other day (reduced from £30 TO £4.99), which has over 1000 recipes in so should give me some new inspiration!

    I have a similar book. Good Housekeeping Complete Cooks Book and Good Housekeeping Step by Step Vegetarian cooking (not that we are veggies though) I always think it is worth having a big cook book(s)... or my bibles as I like to call them (Delia being one of them). Yours sounds perfect Helyg - I want one too now.

    I have found a recipe that I have everything for apart from honey which I'll get as I can use that for baking too. It is Lamb Tagine...

    I found it on allrecipes.com it has good reviews too. This site is good as you can put in the ingredients you have and what you don't want and then it brings up recipes that fit (ish) your requirements - helpful to use up things you have lurking. There is a UK version too.

    Thanks to misskool's inspiration we had coronation chicken sandwich and a wrap for lunch today - yummy!
    Thanks also Champys - I will try that idea, have some bacon in the freezer - may try to do it with no cream, replacing with an egg yolk and parmesan instead. It will delude me into thinking I am being healthier!
