    Hi inflationbusting,

In my opinion all of those will freeze well. If someting is pastry or bread based (eg croissants), once defrosted I pop them into a hot oven for a couple of minutes to refresh them and they taste freshly baked all over again.

As your thread has dropped down the board I'll add it to the main thread on freezing baked things.

  • Apologies if this has already been asked before I searched but didn't find anything :o

My main thing is that there is only 2 of us, me and my DH and whenever I bake items I either end up giving loads to the in laws or end up with too much for just the 2 of us, now I know most things last a few days in a sealed container.

I would love to bake more tray bakes and flapjacks etc - does anyone freeze these and if so how do you freeze & store them? Would I freeze them on a tray and transfer to a tub and take out as I need?

    Many Thanks

Years ago I used to send a flapjack tray to my brother..he was at Portsmouth Poly (shows how long ago it was) but a tray would last him ages..unfrozen.

I would stick them in cling film in a tub (then they don't stick together) and can thaw as needed in the fridge.

I freeze things, usually in freezer bags TBH. I'd say give it a go. if its horrid when thawed then you just know not to freezethat particular thing again. most stuffs alright. cake can always be served with custard if its a little dry.

I oftern freeze cakes etc. for the same reason, only the two of us here as well.

I just pop the cakes into a bag and put in the freezer then take out as needed.

I froze a victoria sponge in this way, cut the sponge in half and froze one half, unfilled. Then just took out and filled with jam when needed.

The same with a batch of muffins, just take out 4 at a time, for example.
  • I am hoping to freeze muffins and buns etc, I will try the flap jacks to see how long they last unfrozen or I might freeze half to see how they manage :)

I will have a google to see if it is possible to freeze biscuits :)

    Thanks again for the advice!

  • It is possible to freeze biscuits too. :-)

Most kinds will freeze perfectly well, and won't stick together so you can just take out as many as you want to defrost. And if you take out a muffin/cake/cookie at breakfast time and wrap it up to take to work, it will be defrosted and ready to eat by morning break time. :-)

Hey. I bake for my dad and freeze some or all of everything I make. I've never had any problems. I'm not even very organised; sometimes I just throw it in, forget and make pitiful attempt to bag it a week later. I've frozen muffins, cookies, oat bars, cake, carrot cake with icing, scones and rock cakes. I've also frozen (blackberry) crumble and then I reheated it in the oven and it was good.
