Sometimes I buy a bunch of bananas to purposely let get over-ripe, make up several banana loaves and freeze all but one :D They come out of the freezer lovely every time!

ooh, I adore banana bread :D

    I use this recipe

I am absolutely rubbish at baking (my buns could be used as bricks!) but this turns out perfect every single time.

mmm...now I want banana bread :rotfl:

Ooh, you've just reminded me I've got one in the freezer I can get out for the morning! Thank you! I also am terrible at sponges (look like giant biscuits) but my banana cake is loved by all! :)

So does it 'lose' anything by being frozen or is it just as good as when fresh? Does it go 'soggy' ?

No, it doesn't get soggy. It tastes just as good as when fresh. :)

i freeze banana cake - when i have leftover bananas - i make loaf shaped cakes as the fit better in the freezer - no problems, i also use the same recipe in muffin tins to make banana muffins.

    any help please.

You can freeze cake, and you can freeze bananas too :) As this has fallen from the front page of OS, I'll add it to the existing thread to keep ideas together.
