Alex, what are you substituting for dairy fats in your muffins? I might be able to help...

Vitalite usually. And soya milk if the recipe calls for milk - think this might be the problem as soya milk isn't the tastiest stuff in the world!

I have Apple and Raspberry muffins, or Dairy Free berry muffins.

3 large baking apples - peeled and cored
    450 ml water
1 1/2 tsp allspice (I reckon you could use ginger or cinnamon though)
    300g plain wholewheat flour
    1 tbsp baking powder
    1/4 tsp salt
    3 tbsp caster sugar
    85g fresh raspberries

    Method:
    1. Thinly slice 2 of the apples and place them in a saucepan with 6 tablespoons of the water.
Bring to the boil and reduce heat. Stir in 1/2 teaspoon of the allspice (or alternative) cover the pan and simmer, stir occaasionally for 15-20 mins or until water is absorbed.
Remove from the heatand cool. Blend in a food processor until smooth (I can't see why you couldn't just mash with a fork? Muffins are supposed to be a bit lumpy, maybe to release starch?) Stir in the remaining water and mix well.

    2. Oil a muffin pan or line with cases. Sift the flour, baking powder salt and rermaining allspice into a bowl, stir in the sugar.

    3. Chop the remaining apple and add to the flour mixture. Add the raspberries then combine gently with the flour mixture until lightly coated. Finaly gently stir in the cooled apple/water mixture. Do not overstir - lumps are OK.

    4. Divide the mixture evenly into 12 cases (about 2/3 full) Bake ina preheated oven 200 degrees c. for 25 mins until well risen and golden.

I might do this as it seems quite low in added sugar. Hmmmm.

Oh yum yum yum! I'm printing some of these recipes out, they all sound divine :)

The boss has just treated us all to pink champagne and chocolates for all our hard work over the winter - how nice is that? He's not usually known for saying thank you so I was really touched. Bless him.

Well after trying to find a recipe I gave up and threw what I had in a bowl! Dylan enjoyed mixing and spreading so even it it tastes revolting he still had fun! It's a kind of flapjack mix but with a small bit of olive oil and then I mixed hot water with dried fruit and pureed it to get the sweetness and moisture.
Oh and some chopped nuts and raspberries in for luck! It tasted OK before it went in the oven lol!
    Fingers crossed!

    Wow, just catching up.

Must be something in the air today, I've baked a loaf for the first time in ages.
    Those Hobnobs sound rather tasty!

Magpye, your emergency measures sound like mine. I had a hole in a pair of black opaques last week so I coloured my leg in with eyeliner.

I have the best boyfriend in the world - he's just presented me with the boxed set of Mad Men. I missed loads as I was in India and never caught up. I think I know how I'm going to be spending the next few nights!
  • I have been known to cut off the damaged leg of a pair of tights and match it with another. I wore two gussets, lol. I used to go through so many pairs of tights when nurses had to wear dresses!!!!
