    Lime and Poppyseed Muffins (I used Lemon instead though!)

    Makes 12
    175ml sunflower oil
    225 g plain flour
    1 tsp baking powder
    1/2 tsp salt (I left this out as don't add salt to food Dylan is eating)
    225g caster sugar
    1 large egg
    1 large egg white
    150 ml milk
    1 tbsp lime juice (I used doubleish as I ;like it zingy)
    1 tbsp grated lime rind
    2 tsp poppy seeds


    Sift flour, Baking Powder & salt into a bowl. Add caster sugar and mix.

    In another bowl, whisk egg, egg white, oil and milk. Then add lime juice and rind - stir in.

    Add wet mix to dry and add poppy seeds and gently stir to combine but leave it lumpy.

    Divide between 12 muffin cases.

    Cook at 190 degrees for about 25 mins.

    I lurve muffins, I make them with raspberries and white choc usually. Although I made banana and walnut recently and they were fab too.

    I dont like muffins myself, they were the most common snack to have when I was on the eating disorders unit and it put me off for life :(
    I love making them though!

    Oh FGS it's just started snowing here, there's no way I'll be able to get up the street with 1 million parcels (okay slight hyperbole) in this!!! Boo!

    I can't make anything nice, we have no eggs. :( Need to do a shop tonight when DH gets back with the car.

    I kinda agree, daisy..I love baking, but once I've mixed / eaten the leftover mixture, it's successfully put me off the cooked things..Which is great as far as the guys at work are concerned lol..

    I don't seem to have a good touch when it comes to muffins. Wonder if it's because of making them dairy free? Doesn't usually seem to matter in most recipes but my muffins never taste quite right.
