Oh FGS it's just started snowing here, there's no way I'll be able to get up the street with 1 million parcels (okay slight hyperbole) in this!!! Boo!

One of you please teach me how to make muffins! They only time I tried to make them they went totally wrong and I had to chuck them all away
I read on someones blog (think it was carolines) a recipe for muffins using sour cream. I have a pot of low fat sour cream that needs to be used and I thought I could have a go at making muffins with it - does anyone have any nice recipes that would be suitable?One day Rodney we'll be millionaires£2020 in 2020 - Running Total £170 -
I have Apple and Raspberry muffins, or Dairy Free berry muffins.
3 large baking apples - peeled and cored
450 ml water
1 1/2 tsp allspice (I reckon you could use ginger or cinnamon though)
300g plain wholewheat flour
1 tbsp baking powder
1/4 tsp salt
3 tbsp caster sugar
85g fresh raspberries
Method:
1. Thinly slice 2 of the apples and place them in a saucepan with 6 tablespoons of the water.
Bring to the boil and reduce heat. Stir in 1/2 teaspoon of the allspice (or alternative) cover the pan and simmer, stir occaasionally for 15-20 mins or until water is absorbed.
Remove from the heatand cool. Blend in a food processor until smooth (I can't see why you couldn't just mash with a fork? Muffins are supposed to be a bit lumpy, maybe to release starch?) Stir in the remaining water and mix well.
2. Oil a muffin pan or line with cases. Sift the flour, baking powder salt and rermaining allspice into a bowl, stir in the sugar.
3. Chop the remaining apple and add to the flour mixture. Add the raspberries then combine gently with the flour mixture until lightly coated. Finaly gently stir in the cooled apple/water mixture. Do not overstir - lumps are OK.
4. Divide the mixture evenly into 12 cases (about 2/3 full) Bake ina preheated oven 200 degrees c. for 25 mins until well risen and golden.
I might do this as it seems quite low in added sugar. Hmmmm.0 -

Afternoon everyone. Hope you are all doing okay. Hugs to those who are feeling a little out of sorts or unwell.
Sorry not to be around much and not to post an outfit on my blog... I only post on days off as otherwise my posts would be the same every few days but on my day of yesterday I was having a real 'FAT' day! I got so upset about it and just ended up throwing on any old thing.
All this talk of banana bread and muffins is making me want to bake today but I'm not sure I really have time. Vicki - my sister is completely petrified of bananas, so much so she can barely even look at one... if she touched one she'd FREAK OUT!
Retro I think it was you that mentioned Glee... god I love it! Such a Gleek. Put all the episodes on my mp4 player to take to work tonight as I have to be in overnight!0 -

Most common problem is over combining them...the ingredients should still be lumpy, work the mix as little as possible with the spoon...tbh I don't enjoy making muffins.0 -
I agree LIR, there's something unsatisfying about leaving the mix half combined. I prefer something you can cream together properly, alas, Dylan's mixing skills are undeveloped (and Mr Independent won't let me help) so muffins it is!
I'm thinking maybe some flapjacks/oaty traybakes instead as I think I'm out of baking powder.
I've pretty much got all store cupboard stuff - any ideas?
It's got to be nothing too stove based and nothing that requires whisking though!0
