  • I have the book but can't see any reference to Oxtail in the index.
What is the recipe? A soup, main meal, etc?
 Ageing is a privilege not everyone gets.

  • Here is one from my online cookbook that Money saving Diva pasted ages ago.I have tried it and its lovely.I did it in my Sc and cooked it until I could run a knife through it easily.you can't really overcook it as it is just so delivious and longer cooking makes it so tender it almost falls apart

Oxtail Casserole/Stew Cost for a real hearty stew around 3-4 quid

1 oxtail about 2-2.5 lb. Cut up
    2 tbspn. cooking oil
    Salt and Black pepper
4 rashers (slices) Bacon (Sugar cured, rind less)
    2 medium onions sliced
    1 clove garlic crushed
    4 carrots pared and sliced
    1 tin peeled chopped tomatoes
1 pint (16 fl. Oz) hot water
2 stalks spring onions finely sliced
    1 sprig thyme
splash of red wine if you like (good dollop)
    • Trim away excess fat and brown oxtail on both sides removing when brown.
    • Pour off excess fat.
    • Dice bacon and fry for a few minutes.
    • Return oxtail to pot with bacon, add carrots, onion, garlic, tomatoes and hot water.
    • Cover and simmer gently for 3 1/2 to 4 hours or until oxtail is almost tender.
    • At this stage add more liquid if necessary and season.
    • Cover and simmer for 20 to 30 minutes.

Long slow cooking is the best way of cooking oxtail. It’s delicious with fresh greens and mashed potato mashed with tiny cut up spring onions
