ive got a chunk of venison in the freezer (my fil shoots them) and im not really sure what to do with it, any ideas welcome because im sure it'll make a great meal. i dont know which part of the animal it is though.
so im thinking a stew/slow cooker type recipe is going to be best

I won in a raffle a joint of Venison. It's now sitting in my freezer. I have never had it before and no idea how to cook it. Would appreciate any feed back. Thanks in advance.0

Ok.
Roast it.
Hot oven, 220 for 20 mins then 10-15 min per 500grams, depending how well done you like your meat.
Brown the joint well in lard or goose or duck fat and salt it well too. (Um, before browing:o)
It really does need to rest more than other meats I find.
It takes flavour quite well. Personally I don't like it with thinks like bacon so much. Red wine gravy is popular, or juniper sauces.
I quite like it with fruits ......quince, redcurrants, that's sort of thing, in a jus. Its also delicious with horseradish.
Edit...crikey.....I was just about to go to bed when it occurred to me I forgot to say to turn the oven down! After firs 20 mins turn oven down to 150!!!!!!
