venison: what to do with it?

Hi all,
I've been given a leg of venison for my Sunday roast, and have no idea how long to cook it for, or at what temp. Any ideas? I assume it depends on the weight?

There are many recipes for roast leg of venision on websites - I have just made a search and here is one from CDKITCHEN.COM which will give you an idea - I have never roasted a leg of venison myself.ROAST LEG OF VENISON RECIPE
Ingredients:
*1/2 pound salt pork
* 6 pounds Leg of venison
* 2 Cloves garlic, sliced thin
* 1/4 pound Butter, softened
* 1 tablespoon Powdered thyme
* 3 tablespoons Flour
* Salt & pepper to taste
* 2 1/4 cups Stock or beef broth
Directions:
Lard the venison with the salt pork, adding the garlic slices after the salt pork has been inserted. 2. Rub all surfaces of the leg with soft butter and dust with the powdered thyme. 3. Put roast in uncovered roasting pan, add 1/2 cup liquid, and roast at 325F for about two hours. Venison should be served rare, but not bloody, so figure about 16 minutes per pound. 4. Turn off oven, open the door, and wave it open several times to reduce heat. Place the roast in a metal pan and keep hot--don not roast anymore. 5. In the roasting pan, combine flour and drippings, stirring in the stock. Heat pan on stovetop and cook on high heat, stirring constantly, until gravy is thickened to proper consistency.

For an idea, as I don't know what size your leg of venison is - it seems to say in other recipes (for roast leg of venison) that it is 16 mins of cooking per pound, however this seems to be for the 'rare' side, as they say it should be on the rare side. Personally, I would rather more on the well cooked side!0

Venison can have quite a strong flavour, so you may not like it, the best thing to do would probably find an old cook book when it was a more common meat. Its got a real 'gamey' taste to it. maybe google could help or the bbc websites cookery pages.

It is best cooked slowly if it you can't identify which part of the animal it is from.If it is a leg joint it can be roasted.I always braise venison in the oven in water and red wine until it is cooked and then stir a couple of spoons of jam [damson if poss]or cranberry sauce into it as it gives it a lovely flavour0
