venison: what to do with it?

    Me and my beloved have ended up with some venison steaks :D Obviously cos it's quite dear we're not going to have them very often if ever so we want to make sure we get it right.

    What on earth should we do with them? Any ideas? :confused:

    Hi Ianna,

    It will depend what cut of venison that you have but venison steak can be cooked just as you would a beef steak.

    the one time i had them (yellowstickered) i slapped them onto an oiled cast iron grillridged pan and treated them like beef steaks (in other words 30 seconds to a minute each side).. it was OH eating them and he likes his meat bloody. he said it was delicious so i'm glad i didn't faff around any. you might want to do it a bit longer depending on how thick your steaks are - mine were about an inch or so thick.

    We like venison - it is lovely and incredibly healthy as it has very low fat and cholesterol and tastes great.

    However, because it does not have a lot of fat in it you must make sure not to over cook it or it will be chewy and tough.

    Treat is as you wuld beef steak, depending on the size of the steak I would cook it about 2-3 mins for med rare 3 - 4 mins for medimum or so on each side and leave to rest. Serve as you would beef steak - potatoes (or chips!) and veggies. Venison goes lovely with a sauce of red wine or berries. If you feel like doing something really different Gordon Ramsey does a recipe with chocolate sauce for vension!

    I've use lamb burgers from the butchers and did all the trimmings as for a roast, roast spuds, parsnips, veg, gravy etc, lovely.
