venison: what to do with it?

    That's how I found out about it and all! Just couldn't see any info on when venison is in season.

    I think farmed venison is in season all year round, but I'm not sure for certain.

    I think it must be the start of the season as my DH's colleague has shooting rights on some land and they bagged a stag last week; it's currently hanging in the garage! He did say something about not being allowed to shoot does at this time of year though.
    I have the mind of a criminal genius. I keep it in the freezer next to Mother....

    Sorry just looked properly at the website and it's wild venison isn't it ? Durr:o My book, Seasonal Food by Paul Waddington indicates that the open season for venison is pretty much all year round because different species and sexes have different seasons. In October, red stags, fallow bucks, roe bucks and sika stags are in season in England, but there are differences in Scotland. It's all quite complicated :rolleyes: HTH:)
  • my local famers market usually only has 1 game stall, but last week there was 3 so i'm guessing that it's in season about now.

    we bought some diced venison that we're having in a casserole tomorrow :)
  • We find Venison is great in stews but too dry and tasteless cooked by itself. I think it is farmed all year locally.

    Most wild game is only available during the shooting seasons, which vary from animal to animal. Here are the seasons for the main types of game.

    Grouse 12 August to 10 December
    Pheasant 1 October to 1 February
    Partridge 1 September to 1 February
    Ducks and geese 1 September to 31 January
    Hare 1 August to 29 February
    Red deer stags 1 August to 30 April (England, Wales, Northern Ireland), 1 July to 20 October (Scotland)
    Red deer hinds 1 November to 28 February (England, Wales, Northern Ireland), 21 October to 15 February (Scotland)
    Fallow bucks 1 August to 30 April
    Fallow does 1 November to 28 February (England, Wales, Northern Ireland), 21 October to 15 February (Scotland)
    Roe bucks 1 April to 31 October (England, Wales), 1 April to 20 October (Scotland)

    Hi everyone,
    A friend of DH has given us some venison from a deer he found at the side of the road - presumably run over. Have just had the most awful time cooking some of it, because it stunk the house out and seemed to attract every fly in the neighbourhood! My kitchen was swarming with them! Surely something which is this attractive to flies can't be good for you?
    I'm sure hubby will eat it with relish, being 100% carnivorous, but just wondered if anyone else has had any experience of cooking/eating venison. Have got some raw in freezer, so any recipes would be welcome!
