Oooh yes I've made the ice cream before and I plan freezing some rhubarb in prep for making it in the future. I went to a party once where they'd drained the juice off cooked rhubarb and used it to make vodka based cocktails. It added a lovely flavour and pinkness.They are an EYESORES!!!!0

Thanks for all the ideas folks, I have started the Rhubodka, looks promising, after one day the alcohol has obviously drawn the colour from the rhubarb – so a nice rose pink colour already :T.
Chutney and sauce making planned for the weekend and I have a few kilner jars in the cupboard so may try bottling some as I only have a small freezer.Jan - June Grocery spends = £531.61

Rhubarb freezes really well, just open freeze on a tray before putting in bags, I don't bother with blanching. I bough loads from Aldi this week because it is only 69p a pack and I have frozen the lot. So it is there even if it is out of season.Blessed are the cracked for they are the ones that let in the light

I got a load of rhubarb yesterday from my lotti friend and i'm making a rhubarb and custard cake tomorrow with this -http://www.bbcgoodfood.com/recipes/10500/rhubarb-and-custard-cake?pager.offset=140 which i made before (tho' baked for 30mins longer) and was v. tasty.
does anyone have any alternative recipes that i can make with this or than the typical compotes/pies/crumbles pls. I've got about 2lbs left out of 6lbs (the other 4lbs i'm roasting as we speak)0
