    Hi Bonar,

    I just wash, chop, bag and freeze my rhubarb for using in pies, crumbles or just stewed with icecream. These threads may give you more ideas:

    This is how I make Rhubarb Jam:

    I chop in to chucks and cover with the same weight of sugar and leave over night (i think this draws out the water from the rhubarb)

    In the morn i put the whole lot in the pan (sugar and rhubarb) and heat slowly until you can't see any sugar chystals on the back of your wooden spoon. I then boil vigorously until the setting point is reached. I sometimes add 1tsp of lemon juice if it's not reaching it's setting point. Pour into sterilised jars.

    It's as easy as that and tastes wonderful

    I'd second that - difficult to believe that something so easy to gow is so exquisite in taste...although check ot Sainburgs for the price they charge for half a dozen sticks!! astronomical! :)

    When i was little my parents grew it. they had loads. i remember mum freezing it. but she also made a rhubarb fool. it was devine. no idea of recipe tho. but it must of been simple and frugal as that my mum through and through.

    i love rhubarb i personally dont grow it my nan and dad do so i get free supplies,i like it in crumble or just with bit sugar and custard yummy

    My mum has a brill recipe for rhubarb chutney, which I make every year. It's terrific with anything fried, especially fish. Also a spoonful really livens up baked beans.
    2lb rhubarb
    1pt vinegar
    half pound onions
    half pound raisins
    1oz curry powder
    2ld brown sugar
    1oz ground ginger (I use lazy ginger)
    1tbsp salt
    quarter tsp white pepper

    Chop and chuck everything into a big pan, and boil it up for an hour or two.
    Once bottled will keep happily in the cupboard til the next year's batch is ready.
