If you are dieting you can also use the oven method with some ginger, and perhaps some cardomon or fivespice then sweeten JUST ENOUGH with a little honey or if you must, artificial sweetener. I've done this and its ok as far as diet rhubarb goes. I need spice to mask the ''weird'' sweetener sweetness.0 -

rhubarb jam
same weight of sugar as fruit, juice of 1/2 lemon. Dissolve slowly then boil until at setting stage. I added a wee sprinkle of ginger as well.
Very tasty!

Rhubarb icecream? We made a couple of batches last summer and are just getting down the last of it. Recipe was off the web from Delia I think (its the one with a sort of crumble stuff to go alongside it).Adventure before Dementia!0

I grow a lot of rhubarb so as already suggested I make rhubard jam, tarts, chutneys, fools and crumbles with it. You will be able to serve it with meat too (but as a veggi I have never tried this).
As an aside it might still be worth you making the rhubarb crumble as not everyone likes plum crumble. I like plums and I love crumble, but hate warm / hot plums and so would never eat a plum crumble.0 -
