  • RHUBARB AND GINGER CHUTNEY - Amended Reader's Digest Recipe

    2 1/2 lb rhubarb
    1 lb onions
    1 pt vinegar
    1 lb sugar
    1 tablespoon ground ginger
    1 1/2 teaspoons mixed spice
    salt if necessary

    Use 1/3 of the vinegar to simmer the ingredients in a large, thick-bottomed pan. When softened, add the rest and simmer again until very thick. Pot at once. Makes 4-5 jars.

    Keeps at least two years, so far.

    Variation on the above is to substitue the ginger with a couple of tablets of liquorice melted into it.

    We went to a wedding recently where instead of expensive 'goodie bags' or other pointless (and costly) stuff on the tables the bride had MADE little pots of jam, which she decorated with circles of gingham and other pretty fabrics, tied with pretty ribbon with labels on which she'd written the place names. I can't think how she had the time, but they were lovely. And when we opened the jam it was delicious - we both had raspberry and rhubarb and it is really fabulous on yoghurt - slightly runny and very tasty. I haven't got the recipe, but I am sure there must be one in a book somewhere.
  • I make raspberry and rhubarb jam. We like it because it has a good raspberry flavour with less pips. I just use roughly half and half of the two fruits and a pound of sugar to a pound of fruit and boil it up as normal.

    I posted a thread last week asking for ideas for a dessert for 20 as I was voluntering to cook at a homeless centre, and after lots of suggestions opted for a rhubarb crumble. Then I spoke to the other lady who has volunteered to do the other dessert option, and she is making a plum crumble! So I will be changing my dessert on the night

    Only problem is that this leaves me with enough rhubarb to feed 20. Now I love rhubarb but none of the rest of the family will touch it, and even I can't eat 20 portions of crumble on my own, even assuming I freeze some of them and stagger the eating! So alternative ideas for rhubarb are welcome.

    Rhubarb tart! Crisp sweet shortcrust, creme patisserie and rhubarb cooked in the oven with a syrup made from sugar and its own juice....thats actually my idea of heaven!

    Rhubarb cooked in the oven with sugar is also great with yogurt for a sinful breakfast. Or between the layers of a victoria sponge, or alone with custard, or baked into a cake...or astopping for cheese cake, or beside a pannacotta

    More excitingly perhaps, I cook it with ginger and fivespice and serve with salmon. (think mackeral with gooseberries)

    Can you tell I LOVE rhubarb? :)
