Ingredients
500 g rhubarb
200 g brown sugar
6 banana shallots, peeled and finely chopped
1 tbsp thyme, leaves only
1 star anise
1 cinnamon stick
1 clove
3 cloves garlic, chopped
100 g cherry tomatoes
200 ml red wine vinegar
1 lemon, juice and zest

Method
1. Place the rhubarb into a saucepan with a drop of water and add the sugar. Cook on a medium heat, until softened.
2. Add the shallots, spices, garlic and tomatoes. Cook for 5 minutes.
3. Add the red wine vinegar and lemon juice and zest. Simmer for 2 hours, until most of the liquid has evaporated. Check for seasoning and leave to cool. Store in clean, airtight jars.

I am looking for ideas to use up some rhubarb. I have access to a HUGE rhubarb patch and am trying desperately to keep it under control before it starts turning a bit rough.
I love things like stewed rhubarb, crumble, pie. I still have some jam from last years crop and friends are constantly getting handed a bag to use up.
I have found a recipe for rhubarb and date chutney and another serving it roasted as a side with roast pork.
I did think about making wine but don't have demijohns any more and don't really have the space to store them whilst bubbling away, other than setting up a road-side stall does anyone have any other ideas or uses for rhubarb.

Wow - who knew how versatile rhubarb could be, I like the sound of some of the savoury recipes and will definitely give the rhubarb sauce/ketchup and the rhubarb and beetroot soup a go, it will make a change from endless pies & crumbles; a gal can only eat so much stewed rhubarb.

Katep23 - I have only ever tried doing the hairy bikers christmas pudding flavoured vodka, but rhubodka sounds rather interesting - off to search in the cupboards, I'm sure I have bottle of vodka lurking in there somewhere :beer:Jan - June Grocery spends = £531.61

We make rhubarb ice cream - I think its a Delia recipe but its available on the internet.Adventure before Dementia!0
