    Hi

    I have had success with freezing cake mixture. I have made up a cupcake mix, to the point where you would normally then put it in the cake liners. However at this point I then put the mixture in a zip lock bag, and then freeze. I then defrost at room temperature, snip off the corner of the zip lock bags, and then squeeze into cake liners. Bake as normal and they taste fine, no further washing up to do as you just chuck the zip lock bag away :j

    Cookie and biscuit mixes tend to freeze beautifully, if you look online for 'icebox cookies' there are hundreds of recipes. I wouldn't want to cook cake mix from frozen as I'd imagine that the outside would cook before it's completely thawed, along with the issues with raising agent, but it might be worth a go for buns as they're so small - anything bigger might be a problem though.

    Have you ever seen the mug cake recipes? Some of them work brilliantly and they'd be great if your OH fancies a quick hot pudding but you don't want loads of cleaning.

    As title suggests I have 2 large bananas, no eggs, flour (self-raising), sugar and all the other bits and pieces. What can I make thats simple to use up the bananas?

    mash nanas and spread on bread with a bit of cinamon and fry in butter....i make a banana loaf with ripe bananas but u need eggs for the recipe i have hth
