I use a pound cake recipe for apricot cake, using dried apricots (the juicy ones) although you can use the others and it's fine. Tinned apricots should work, as should chopped fresh ones, although it seems a bit of a waste... I guess you could add a couple of tablespoons of apricot jam like you do with marmalade cake, and then pour hot apricot jam over it while it cools to make it lovely and moist and sticky!

Enjoy... And when you've come up with a recipe that works, please post it for us!

Yep :D puff pastry squares, plonk an apricot in the middle, egg white wash the edges of the square, sprinkle sugar on the apricot, fold the pastry to encase the apricot. On baking tray seams down, and egg white wash again and bake 40mins or until golden brown. Dust with icing sugar whilst hot. Serve hot as desert or cold with afternoon tea or coffee

was wondering if anybody done this and how did you get on?
i have heard of bagging up the dry ingredients to cakes and freezing with instructions with a label saying what needs to be added and how long to cook for etc.
could you for example make a big batch of muffin mix, put the wet mix in the cases and then freeze uncooked? i find half the hassle of cooking is all the bloomin washing up if i could get all the messy bit out of the way in one go that would be fabby ;)
orrr could i save up my empty marg tubs dollop some cake mix in, freeze with lid on then whack it in the micro when needed as my other half is always picking up those tinned sponge puds and they are expensive
im a lazy bint, i hate cleaning/washing up but at the same time i hate wasting money...i`ll find a way to cut every corner :o:rotfl:
proper prior planning prevents !!!!!! poor performance! :p

Ah well, looks as if I am going to have to become inventive over this apricot cake. I can see OH being subjected to repeated trials over time!

I will let you know. When I'm happy with it! As a default, I think your idea is a good one Greenbee.

I have a lovely recipe for Lemon Pots, basically lemony egg custards. Made some put in oven , after an hour they still hadn't set. I realised that I had left out the eggs!

What can I do with my mixture of sugar, lemon juice and zest and ( now) cooked cream?
