    I've been asked to make a "Double Apricot Cake". So far, I've completely failed to find one.

    Can anyone help me out with a recipe?

    I do a bit of baking for a Market - so it was someone wanting to place an order.

    I understand that it's apricots and apricot jam - but all in the cake rather than having a layer of jam if that makes sense.

    Is the paper from your part of the world? If not may be worth doing a search with your local paper. They must have seen a recipe somewhere.

  • I made some Tottenham cake yesterday (never had it before so had to buy a slice on Friday to find out what flavouring was in it and can't find a recipe!)

    Anyway, although the icing is a perfect colour, it is much softer and therefore running away a bit now that it has been portioned. What can I use in future to make it less fluid? Any drier than I made it and it would not have spread :(

    Is this glace icing or royal icing? I sometimes forget to add glycerine to royal icing which then sets really hard! Never heard of Tottenham cake either!

    Glace icing. Think Tottenham cake is only made by Greggs bakers, which is why it was guesswork on my part. Will still be eaten anyway:rotfl:

  • I would try using fondant icing it has a firmer (although still soft) set to it. Think of the icing on top of a bakewell tart, and that's what you'll get.
    Squares knitted for my throw ~ 90 (yes!!! I have finally finished it :rotfl: )
    Squares made for my patchwork quilt ~ 80 (only the "actual" quilting to do now :rotfl:)

    I was sure MSE folks would be falling over themselves to point out how deficient I had been with my Google searches! Perhaps it is in a cookery book somewhere. I've looked through mine without success though.

    Whitewing, I am in Lincolnshire - in an area which doesn't think that you want recipes in your local newspaper!

    Apparently, the lady has tried this cake "somewhere" locally - it was made with dried apricots, and she's sure it was homemade.

    I've bought 1lb of fresh apricots from the Market at lunch time - seems a lot of apricots for a 1lb cake, but I shall enjoy testing it for myself.
