The sausages will make a lovely casserole, but I agree with kittycat about browning them.
Have you got herbs and spices? And tinned tomatoes? Here's how I'd do them:
Brown the sausages. In whatever pot you're going to use, fry off some onion and garlic, then add whatever veg you're using, cut fairly small. I'd cut each sausage into three, on a diagonal, then add them to the pot. Squirt in a bit of tomato puree and stir to coat, add a crumbled stock cube, a sprinkle of ground cinnamon, a good grating of nutmeg, some pepper and herbs. I'd then splash in some red wine to deglaze the pan if I had some knocking around or else just a bit of water, add tinned tomatoes and some brown sugar to help with the acidity of the tomatoes. Then I'd swirl some water round in the tomato tin to use up all the flavour and add some to the pot until I was happy with the level of liquid. Pop on a lid and then I'd leave to bubble gently until the veggies are tender. Serve with a pile of mash or with some decent bread.Avoiding plastic, palm oil, UPF and Nestlé0 -

Hi, I have been doing this casserole for a little while now and OH is so impressed he said I should definitely write it up for MSE! so here goes:
Recipe is for 2 so easily doubled etc.
5 sausages (I use GF, 2 for me 3 for OH)
1 x packet of regular mushrooms chopped (or 3 large shrooms)
1 x pepper deseeded and chopped
2 x small courgettes chopped
1 x 400g tin tomatoes
1 x large glass of red wine (or one of those small bottles, usually on offer!)
half a tin of water (from the toms - swirl round)
2 tsp GF chick stock concentrate or a cube
2 tsp GF worcester sauce
small handful of red lentils
salt and pepper
tsp dried thyme (or couple of sprigs of fresh if you have)
optional - 6 new pots chopped
Turn on oven to heat, then in a casserole pot on the hob, fry the sausages in a little oil until lightly browned then add everything else and pop in the oven at 170-180 for 45 mins to an hour.
I did this earlier this week and it took me 10 mins total to prep. Told you it was easy!:j2019, move forward with positivity! I am the opposite of Eyeore :rotfl:0 -
That's a recipe that I'll be adding to my ever expanding Word document folder. Will definitely be going on next month's menu plan (already had sausages this month and only eat them once a month).

Nice idea with a jacket, hope you both enjoy! I buy the big box of M&S GF sausages, about £4 for 20 I think, then I portion up in to 5's and pop in freezer for quick mid week meal. I just defrost overnight. Have tried it with other veg and still tastes nice.2019, move forward with positivity! I am the opposite of Eyeore :rotfl:0

That looks like a lovely, well-bulked out, MSE, GF sausage casserole to me. Interesting to read that M&S can do GF sausages so reasonably too - I didn't know that. Our local Booths have the Richard Woodall ones but they are SOOOOO expensive that I tend to use regular ones and suffer the consequences.

Have amended recipe to say GF stock cube, just in case.
M&S have quite a bit of their range as GF now, I get all my trimmings there at Xmas such as sausage meat, stuffing, cocktail sausages etc. I keep an eye out for the mixed pack when they are reduced and pop them in the freezer for a treat later in the year!
Forgot to say also that there is usually enough veg and sauce left for me to have with pasta the next day - bonus!2019, move forward with positivity! I am the opposite of Eyeore :rotfl:0
