I made one last night. Not a casserole as such as made on the hob.
2 sausages per person browned.
Then I chucked some onion, mushrooms, leek, 2 cloves of garlic and 2 tsp of chillis in a pan and browned a bit.
Added 200g of dried green lentils, 300ml of stock and enough passatta to cover everything and a splash of balsamic vinegar. Brought to the boil and boiled for 10m. then chopped up the sausages and added them and turned the heat down.
Simmered for about 30-40m until the lentils were cooked.0 -
Hi nich,
I always brown the sausages or they look really pale and insipid once they are cooked. I think it probably adds to the flavour too.
There's an earlier thread with lots of sausage casserole recipes so I'll add your thread to it to keep the recipes together.

I made a sausage casserole last night in the hope of tempting my OH and DS into eating something different. They loved it and now want it again.
I used a cheap packet mix to add to my ingredients, but hate doing this as normally everything is from scratch.
If I do a beef casserole I used onion gravy but this was more of a tomato one.
Has anyone got a recipe for the gravy part of a sausage casserole which I can use rather than a packet thing.... tasted nice but can't stand packet stuff normally!

Last time I did one I just used gravy with some herbs and a bit of wholegrain mustard in it - was delish

I use the other plain bisto gravy(doesn't specify a meat but isn't onion?), tblsp flour, add heaped tsp paprika and tblsp tomato puree(or some tinned toms/passata, whatever's available). I fry more onions and garlic for the casserole than when using a packet.Living cheap in central London :rotfl:0

So it's a tomatoey sauce you are after for your casserole, really ? This is how I'd do it - onion, chopped, garlic, crushed, celery stick, chopped (optional), a carton of passata (25p in Asda, or you can use chopped tinned tomatoes if you want them chunky), 1tsp paprika, 1tsp herbs of your choice (parsley or something a bit more robust, like oregano or thyme), 2 bay leaves (if have none, just leave out), salt and pepper to taste. If you want a milder, non-acidic version (those toms can be a bit tangy that way), just add 1/2 tsp of sugar, or a couple of dried prunes or some sliced apple (excellent with sausages anyway) instead. Any root vegetables you have knocking about would also go really well bunged into this, adding bulk and interest0

Sausage casserole is one of my favourite dishes. I use a tin of tomatoes, or more if doing a big batch, a quarter of a beef stock cube, made up to about 200 mls stock, paprika, Worcestershire sauce, mixed herbs and S&P, bit of Tabasco and a good squirt of tomato puree. Lovely!
I also bulk it up with veg (aubergine/peppers/mushrooms/courgettes etc) or beans.0 -
Thank you for the replies, some great ideas.
Hubby has kidney failure so is on a low potassium diet but some of these recipes look like I could adapt them to his requirements.
DS is a little fussy about things, but I'm getting him to try other things. I like the sound of the wholegrain mustard, not sure if he would too though!
I love doing a casserole as you can bung in all remnants of veg, it cooks itself and makes the whole house smell lovely. Always have to have a slice of crusty bread with it though!0 -
The recipe I picked up from here that I always use now is
1 tin tomatoes
1 tin baked beans
1 packet sausages
red and green pepper
worcestershire sauce
