    Yeah, I fell for it myself until a few years ago. Dave Ramsey is very inspirational if you listen to him, he's in the US but knows his stuff when it comes to getting out of debt.

    I made a sausage casserole last night in the hope of tempting my OH and DS into eating something different. They loved it and now want it again. I used a cheap packet mix to add to my ingredients, but hate doing this as normally everything is from scratch. If I do a beef casserole I used onion gravy but this was more of a tomato one. Has anyone got a recipe for the gravy part of a sausage casserole which I can use rather than a packet thing.... tasted nice but can't stand packet stuff normally! Cheers! Sue

    Why not just look at the herbs and seasonings that were in the packet and add these to you gravy.

    Thank you for the replies, some great ideas.

    Hubby has kidney failure so is on a low potassium diet but some of these recipes look like I could adapt them to his requirements.

    DS is a little fussy about things, but I'm getting him to try other things. I like the sound of the wholegrain mustard, not sure if he would too though!

    I love doing a casserole as you can bung in all remnants of veg, it cooks itself and makes the whole house smell lovely. Always have to have a slice of crusty bread with it though!


    Ah well it might still be worth a shot - my little boy eats it but I tend to add less to his (or rather add more to mine once its done :rotfl:)

  • for my sauce i just bung in a tin of oxtail soup and a tin of chopped tomatoes. gives a lovely flavour.

    SAUSAGE CASSEROLE

    Have you read the ingredients list on a packet of sausage casserole sauce mix?

    Serves 2

    INGREDIENTS

    2 carrots
    2 potatoes
    ½ an onion
    1 tablespoon of oil
    4 sausages
    200g (½ a 400g tin) of plum tomatoes
    1 teaspoon of parsley
    1 beef stock cube
    250ml of water
    Ground pepper to taste

    METHOD

    Peel the carrots and cut them into slices. Peel the potatoes and chop them into 2 cm (1 inch) pieces. Peel the onion, cut it in half, chop one half into tiny pieces and save the other half.

    Put the oil in a frying pan on a medium heat. Add the sausages and onion, and fry for about 5 minutes until the sausages are thoroughly cooked. Stir frequently to stop it sticking.

    Open the tin of tomatoes. Put the juice into a bowl. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the bowl). Put the chopped tomatoes into the bowl. Use half and save the other half.

    Put the sausages and onion, carrots, parsley, potatoes, stock cube, tomatoes and water into a large ovenproof dish with a lid. Stir thoroughly. Put the lid on the dish.

    Cook in a preheated oven at 150°C, 300°F, gas mark 2 for about 2 hours. Check the liquid level from time to time and top it up if it starts to dry out.

    Season with the pepper.

    ADDITIONS & ALTERATIONS

    Use mixed herbs instead of the parsley.

    Serve with a green vegetable, or add 100g of peas 15 minutes before the end of cooking.

    TIPS

    Use good quality sausages. The more meat in them the better. There are few tastier foods in the world than a meaty, herby British sausage. There is nothing worse than a bland, mass-produced tube of pink stodge.

    I use 2 oxo cubes made up to just under 400ml to half a pack of sausages (4), 3 largish mushrooms, mixed herbs and black pepper.

    Then whatever veg you fancy/prefer

    I tend to use a pack of sausages, a tin of tomatoes, a clove of garlic, some dried mixed herbs, salt & pepper, and some bacon. Failing that, DH does like one of the colman's sachets. :)

    When my children were young I used a recipe very similar to tiff's with baked beans, bacon, onions, stock etc in.

    Now it's just OH and I we just love Tana Ramsay's version

    I adapt it with ordinary bacon and sausages to keep costs down but it makes a lovely meal (had it only last night:)).
