    I know I'm lazy but I just cook some (quorn) sausages on the George Foreman grill, chop and mix with a few tins of baked beans, then top with mashed potatoes, grate a little cheese on top and bake until brown. It's my OH's favourite dish!

    Oh - just remembered a casserole in the US (where I grew up) is something that's baked in the oven whereas in the UK I think it's made on the stovetop, so I might be talking about an entirely different dish! Sorry, but it's good anyway so I'll leave the post.

    I brown the sausages (I like to use 'good' butchers sausages but OH is happy with ANY sausage!) then add them to a casserole dish with a tin of chopped tomatoes (or ordinary tinned toms mushed up) with a tin of beans, a good few dashes of worster sauce, salt and black pepper. If I have any of the following and feel like including them
    tin of butter or kidney beans
    some sauted onions
    some sauted mushrooms
    I have even included some leftover cooked new potatoes
    put in oven (casseroles are usually cooked in the oven) at gas 4 for about 45 mins or if I am in a hurry gas 6 for 30 mins. I might even start in in the microwave for 10 mins or so if the sausages are leftover cooked ones and just leave it in oven until any accompanying veg or chips are cooked.

    no you were right, sounds yummy.

    A casserole is cooked in the oven, a stew is cooked on the stovetop.

    I normally use stock, any left over veggies i have. One tip though! I cooked the sausages first and put them in the slow cooker for an hour and they came out so swollen and watery with no taste! If you cook them first dont put them in until quite late on :)

    When my children were young, they really liked a casserole with sausages, baked beans, onion, mushrooms, bacon and (I think) tomatoes or tomato puree. It was very filling and yummy with pasta.

    My way :). Keep it simple. I did this for two lady friends on Sunday, using 76% Scottish beef sausages. Both complained that I'd dished up far too much, but didn't leave any.

    SAUSAGE CASSEROLE

    Have you read the ingredients list on a packet of sausage casserole sauce mix?

    Serves 2

    INGREDIENTS

    2 carrots
    2 potatoes
    ½ an onion
    1 tablespoon of oil
    4 sausages
    200g (½ a 400g tin) of plum tomatoes
    1 teaspoon of parsley
    1 beef stock cube
    250ml of water
    Ground pepper to taste

    METHOD

    Peel the carrots and cut them into slices. Peel the potatoes and chop them into 2 cm (1 inch) pieces. Peel the onion, cut it in half, chop one half into tiny pieces and save the other half.

    Put the oil in a frying pan on a medium heat. Add the sausages and onion, and fry for about 5 minutes until the sausages are thoroughly cooked. Stir frequently to stop it sticking.

    Open the tin of tomatoes. Put the juice into a bowl. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the bowl). Put the chopped tomatoes into the bowl. Use half and save the other half.

    Put the sausages and onion, carrots, parsley, potatoes, stock cube, tomatoes and water into a large ovenproof dish with a lid. Stir thoroughly. Put the lid on the dish.

    Cook in a preheated oven at 150°C, 300°F, gas mark 2 for about 2 hours. Check the liquid level from time to time and top it up if it starts to dry out.

    Season with the pepper.

    ADDITIONS & ALTERATIONS

    Use mixed herbs instead of the parsley.

    Serve with a green vegetable, or add 100g of peas 15 minutes before the end of cooking.

    TIPS

    Use good quality sausages. The more meat in them the better. There are few tastier foods in the world than a meaty, herby British sausage. There is nothing worse than a bland, mass-produced tube of pink stodge.

    Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.
    The acquisition of wealth is no longer the driving force in my life. :)

    I used to buy the packet casserole mixes, but I checked what ingredients are used in the packet and now make my own. :)

    tin tomatoes – blitzed or chop them if whole
    tin of mushrooms
    1 tsp sugar
    about ¼ or ½ tsp each of: paprika / parsley / marjoram
    salt / black pepper
    1 large onion chopped small
    ½ red pepper chopped
    tsp Marmite

    ... don't throw the string away. You always need string! :D

    Just made this - delicious. I added two finger chillis and used half sweet smoked paprika and half hot smoked - very very nice flavour - and extra chilli powder too.
    A little nonsense now and then is relished by the wisest men :cool:
