Great Dusty, thxs:)
My man copied it down, & left off the minor detail of added water!
I was so tempted to suggest he made it ............. Cruel I am, but I was annoyed that he didn't spot his obvious error.
So it's more compulsory lessons in the New Year for him! .... could be fun

In saucepan:
4 tablespoons golden syrup, also known as cane syrup.
1/2 cup sugar
Swirl over heat until golden and bubbly. Do not stir.
Turn off heat.
Whisk in 1 1/2 teaspoons baking soda
Pour onto cookie sheet. Leave to set for 15 minutes.

Ooops - I started typing this before Pink answered.. sorry!
Anyway, I think this is something like you might be looking for. I call it honeycomb, but my family say it's cinder toffee..
I use a large saucepan - it looks frightful when you have finished but it washes off if you soak it in soapy water really easily.
You need:
8 heaped tbsp sugar
8 heaped tbsp golden syrup
4 tbsp water
4 rounded tsp bicarb of soda
Method:- Prepare the tin - oil greaseproof paper and place in the bottom though I use silicon bakeware so skip the paper and just lightly oil. Sieve the bicarb onto a saucer.
- Put the sugar, water and golden syrup into a large saucepan over a moderate heat. Mix it all together.
- Stir continuously with a wooden spoon til it reaches boiling point then keep stirring and time 5 mins. No longer!
- It should be a golden rich brown colour now (but not too dark or it will taste burnt)
- Quickly add the bicarb of soda, still stirring quickly and get the pan right off the heat as the honeycombe will now be frothing and rising up the pan.
- Scrape it onto the greaseproof paper immediately as it is still frothing and leave to set for about an hour. After that - just break into chunks.

Thanks very much both of you, I was sure it had vinegar in and don't have any, so hoped there would be a recipe out there! I'll give them all a bash eventually, and post which one I prefer. Thanks again,
