poured into tin and it set in fridge in about 15-20 min's.0 -

exactly what i did, except for the fridge and it had a bitter aftertaste0 -
My daughter has tried the recipe,(she even bought the book to check, she's so frustrated with it) 14 times and cannot get it right.It's turned out different every time but never right.I told her to give up and go and buy a crunchie.0

I am new to this board, today, now, first post. I, too, liked watching Nigella over the weekend make this hokey pokey thingie. I have just written a post, a really long detailed post, but when I hit enter, it erased saying I wasn't logged in. DaNG.............
So here it is, not detailed, just do this. It works. It's the 5-2-1 method.
5 Tbs plain sugar (I used C&H Raw sugar)
2 Tbs Treacle OR Dark Corn Syrup OR Lyle's Golden Syrup (I used Treacle, I have all 3 and could have chosen any, but the Treacle was closest to reach in the pantry)
1 tsp baking soda

Measure all out and put in containers so no time will pass when don't have the extra time to fuss with measuring something out. Use level measurements, that's what I did. Butter a piece of foil and place it on a cold surface so it's ready when the candy needs dumping. Since I have her show Tivo'd, I know what she said to do and she specifically said no stirring, no stirring, but you can swirl.
In the heavy saucepan put the sugar and then treacle and stir with a wooden spoon to mix BEFORE they go on the fire. When mixed and it'll be dopply, put on the medium fire and when they come together, just move the pan around and around to keep mixing that way. You'll see little bubbles going into big bubbles and keep an eye on the color, dark amber is what you're looking for, and no burnt smell or it's ruined. I had mine on [never left it and never quit swirling] for 5 minutes then I turned it off and took it off the fire. I quickly dumped in the soda and stirred with my wooden spoon aggressively and dumped it on my pre buttered piece of foil, where it glopped into a pool of foamy froth. I left, came back in less than 15 minutes, peeled it off the foil, and dropped the whole piece on the marble, it broke in large shards, I ate 2 and went to bed, pure heaven.

Just tried to make this, and it turned out ok, but I used greaseproof paper, to which it it glued itself, and I couldn't get it off, so the lot ended up in the bin.

I butter a piece of tin foil or a piece of waxed paper with a thumbfull of butter. It will not stick to that. Make sure to leave it the 15 minutes to harden though before trying to yank it off the paper/foil.Just tried to make this, and it turned out ok, but I used greaseproof paper, to which it it glued itself, and I couldn't get it off, so the lot ended up in the bin.

husband tried this last week but something went terribly wrong so it went in the bin - the margarita icecream was a great success though!Blah0

I just rewatched it on demand so can give you what I saw:
150g flour
125g light musc sugar
1 teasp ground ginger
1 teasp mixed spice
1 teasp baking powder
125 ml milk (she used full fat)
60 ml veg oil
1 egg
Mix it all together. Pour into a buttered baking dish (she did not give a size)
Then she sprinkled on what looked like more brown sugar (no quanity given) and more spice (she said as before).
Put on 6 teaspoon size nugets of butter
pour on 500ml boiling water.
Bake in oven (preheated to 220) for 30mins then stand for 10 minutes - serve with cream.
I am going to make it later so will let you know what happens.The birds of sadness may fly overhead but don't let them nest in your hair0 -
Holiday Hot cake turned out fine, all our guests liked it. For me it was a bit too spicey, if I did it again I would not put the extra spice on top. It did create a cake and toffe like sauce. It is a more relaxed supper dish rather than a wow pudding in the looks department. Have left some for the kids to try tomorrow.The birds of sadness may fly overhead but don't let them nest in your hair0
