start with onions garlic and grated ginger root, then add soy sauce and either oyster sauce or hoisin sauce.
or an alternative which you may have in cupboards is for chicken and mushrooms
stir fry some onions and mushrooms and add garlic and ginger at last minute
add the cooked chicken and a couple of tablespoons of dry sherry
add enough chicken stock to cover the meat and onions - bring to boil
then mix some cornflour with water and add to stock let bubble until thick and serve. gorgeous with noodles rice or chips!

I normally cook garlic and ginger (grated/crushed/frozen cubes) with the veggies, then add a big splash of soy sauce and a couple of teaspoons of sugar dissolved in water to make the sauce. It is quite liquid, so I put the noodles in partly cooked and they absorb a lot of it as they finish cooking.
    Trust me - I'm NOT a doctor!

I cook the noodles and beansprouts separate to the rest of the veg and meat - to the noodles I add soy sauce and to the meat and veg I add oyster sauce and then combine the 2 pans at the end.

    Sounds a faff but lovely.....

    Hi Liza,

I've added this to our existing thread on stir fry sauces where hopefully you'll find something you'll like.

  • Am doing a cashew nut stir fry for tonight with rice, but have realised that I forgot to get any sauce to add. Does anyone have any recipes for making their own sauce to add to a stir fry? Would be handy for saving some dosh too (I find stir fries really good for using up what's in the salad drawer but not so money saving if you need to buy an expensive sauce to make them taste nice?)

    Thanks.

I've made in the past from soy sauce, orange juice and a bit of sugar. It makes a rather watery kind of sweet and sour sauce.
