    I also find it's hard to make it taste like shop bought. Soaking and cooking your own chickpeas tastes nicer than tinned, I think but it's one of those things where I tend to think life is short. Agree it does need LOTS of salt and garlic. It also needs thinning down more than you would expect. By the time you have added tahini I find there's not much saving over shop bought.

    However I didn't waste all those soaked and pressure cooked chickpeas - home made falafel are yummy and very easy to make. I make them very small and serve them in pittas - with some shop bought hummous drizzled over!!
    It doesn't matter if you are a glass half full or half empty sort of person. Keep it topped up! Cheers!

    If you want something close to shop bought hummus try this:

    1 tin chickpeas drained (the brand matters as some taste funny - I like the taste of the tesco ones in the purple tin, haven't tried boiling dried ones and using them yet).

    juice of lemon - until the consistency you want (usually 2 lemons)

    1 largish dess. sp of tahini

    1 garlic clove (minced) - more if you like it very garlicky

    a few sprinkles of salt (to taste)

    1 largish dess. sp of plain yogurt (optional but I find it makes it creamier)

    a pinch of cumin

    a dess. sp of olive oil (optional)

    Whizz in a blender until the consistency you like

    Then serve with sprinkling of paprika and drizzle of olive oil
  • I have some chickpeas that need using , both dried and canned ,
    I ordered some tahini paste , thats coming in my tescos delivery tonight .
    do you guys have a T&T recipie ??

  • I never use Tahini, just blitz some Sesame seeds before the Chick Peas. I feel for me that it's an unneccessary ingredient. I make mine by feel and taste really, but Weezl has 2 good non tahini recipes on her thread, you could add tahini in, to taste, I would guess, and that would probably work.

    just made some Hummous after talking about it on another thread! So yum! I always put lots of black pepper in. Tried pickles recipe above. I had tahini - from old detox days. I forgot how yum the home made stuff was. Thunbs up from me.

    have you tried the frozen stuff Janie? Just wondered if it keeps the same texture etc. Might make a batch up to freeze in individual portions , but would be interested to know how it worked out!

    no , i havent yet , i did read somewhere that when its defrosted you have to give it a good old stir ,
    when i made my batch , i took some out and added a little bit of yoghurt to it , this made it much better and not so claggy , so i will do the same to the frozen one when i have it

  • It says on the packet it's not suitable for freezing, but there's no way I'm going to be able to eat it all before tomorrow. Is there anything I can do with it?? Or shall I just chance it past the use by date? The packet hasn't been opened yet.
