    Also to curry_queen for her wonderful Tarka Dhal! Girlfriend has also given a thumb up to that too - the end result is a little watery but we'll boil it down a little in the hope that'll thicken it up!

    I lurk lots, but don't post much, so thought I should really remedy that.

    After much experimentation, I have now perfected the Definitive Spicy Houmous and thought I would share the recipe with you - it's pretty OS! Rough costing = ~£1 for 4-5 good portions.

    Ingredients

    Tin of chickpeas (I soak/boil my own from dry, but use the equivalent of about a tin)
    1 red pepper
    3 cloves garlic
    1 dessert spoon tahini
    8-10 "rings" of sweet pickled chillis (the red ones you get in the mexican section. I like it spicy, but you may prefer fewer!)
    generous glug of lemon juice
    ditto of olive oil
    sprinkle of paprika
    s&p

    Roast the pepper and garlic, I give them a spray of oil from oil mister. Garlic needs 10-15 minutes, the pepper 20-25.

    Squeeze the garlic from its skin and stick it with everything bar the oil & lemon juice in a blender and blend till smooth, adding lemon juice & oil until it looks like houmous. I give a nod towards healthy living by replacing some of the oil with water (although the texture ends up less creamy).

    Pack in your lunchbox with things to dip in it (pitta bread, rolls, carrot sticks, blanched broccoli) - yum! and fewer complaints from co-workers as roasting the garlic seems to make it less whiffy ;) it also gives it a fantastic flavour, much nicer than with raw garlic. It also freezes well, although it doesn't do the texture any favours.

    An even more OS dip I do is with cannellini beans. Saute a small amount of onion in a pan, followed by some garlic. Add cannellini beans and some vegetable stock (enough to cover the beans). Add chilli powder and paprika (maybe 1/4 - 1/2 teaspoon of each) and season. Simmer for 10 minutes then mash with a fork until smooth. Serve with hot pitta bread.

    I used to make lots of houmus but have bought supermarket stuff for a long time now. I tried my old recipe recently and it was disappointing - either my taste buds hav changed or I used to add some other secret ingredient that I have now forgotten.

    I just love dips - they're great for packed lunches. As I don't eat meat, I'm always trying to think up alternatives to the dreaded cheese sandwich!
  • My OH has just reminded me that he used to take my HM hoummus in his packed lunch and his colleagues wouldnt let him stay in the office because the garlic smell was SO strong.

    Perhaps I've just remembered my secret ingredient!!
  • Hi Do any of you guy's have a tested home made hummus recipe please?
    I have tried to make some hummus a few months ago, and it was horrible, put me right of the stuff. However i thought that i would give it one more go as the DD is coming home for christmas from Uni, and loves the stuff. I have got tins of chick peas and Tahini paste, do i have to cook the chick peas or not? The last lot of Hummus tasted really bitter and was really very very grainy, not what we were expecting. Your help would be really appreciated.
    I have googled it, but thought that you guy,s would probably know of a good recipe that's been tried and tested. Hope that someone can help.

    Don't forget to add a dessertspoon or two of plain yogurt and plenty of fresh lemon juice. The yogurt gives it a bit of a creamy taste.

    I'd like to make my humous as my other half gets through tons of it. Anyone know where I find the Tahini that is in the recipe. I've no idea where to look in the supermarket.
