    Cheapest evening meal has got to be a cheese and vegetable omlette with home made bread. Tasty, filling and nutritious.

    yum the suet rolls sound fab and easy and filling : )
    and could be made with any filling i guess ? like a pie / en croute type thing

    could they be frozen? and if so before being baked or after?

    I love to make an easy veggie curry for OH & self:

    Splash of oil
    1 x onion chopped
    2 x cloves of garlic (or more to your own taste) finely chopped
    1 x potato chopped into medium sized chunks
    Couple of big handfuls of mushrooms - roughly chopped
    Tin of value chopped tomatoes
    Tin of chickpeas drained & rinsed (or dried ones pre-soaked & boiled but that takes ages! But they are cheaper.)
    Squeeze of lemon juice (optional)
    Coriander (fresh or dried)
    Cumin - 1 teaspoon
    Curry powder - to your own taste (I use about 1/2 tsp of hot curry powder)
    Rice to serve

    Fry the chopped onions, mushrooms, potato & garlic for about 5 minutes and stir in the curry powder and cumin. Add the tomatoes and chick peas and stir in. You can add a squeeze of tomato puree if it needs a bit more juice!

    Let it simmer for about 20 minutes (till potato is ready), stir in a squeeze of lemon juice if using and a handful of coriander......serve with rice. (I use brown rice)

    I am no gourmet chef and anyone who makes curries may look at my post and go like this: :eek: ??? :rotfl:

    But I really like and it OH does too. I don't know how much this costs as I have never worked this out but it isn't much especially if you already have the spices/herbs/puree in for other meals anyway.

    We always have a big bag of rice in too as it is filling, healthy & cheap/goes with chillis, stir fries, gratin & curries too!

    again beans on toast, tonight we are having a breast from left over chicken in a pot with a tin of veg soup(asdas own) 2 carrots 3 potatoes and an onion no idea what it tastes like ive only just started using left overs for meals

  • Anyone tried Pilchard Curry............

    Tin of pilchards in tomato sauce (big one for 55p, or small one for one person)
    some frozen peas (10p max)
    Curry powder
    Rice (20p)
