tinned tomatoes on toast, though its more of a lunch than a main meal! great if you're in a rush!Mum to gorgeous baby boy born Sept 2010:j0

1 onion
1 carrot
8oz red lentils
1.5 pints of stock
bayleaf
Tablespoon of Marmite (other yeast extracts are available!)
Chop and fry the onion in a bit of oil. Chop the carrots and add. Rinse the lentils and add. Pour over the stock and add the bayleaf and bring to the boil then simmer for 20 mins. Stir in Marmite at the end. Leave it as it is or liquidise for a creamier soup.
Very filling and will make three or four bowls or two flask fulls. Nice for lunch!
Add other veggies if you're feeling flush.
Garlic or chilli powder add a bit of a kick. What if the hokey cokey is what it's all about? :eek:Official "Bring back Mark and Lard NOW! or else (please)" Member 160 -
Onion
Couple of garlic cloves
Can of tomatoes, chopped
Herbs - dried are fine - basil or oregano are nice
Salt and pepper
Teaspoon of sugar (yes, really!)
Extra if loaded - glass of red wine
Chop and fry the onion and minced/chopped garlic in a bit of oil. Add chopped tomatoes. Sprinkle over a couple of teaspoons of herbs, season with salt and pepper and add the sugar*. If using wine, add it now.
Simmer gently for 15-20 mins.
Nice with pasta or as a base for pizza topping or lasagne.
*Why sugar? Tinned tomatoes often loose their natural sweetness - the sugar puts it back. Handy tip from my Italian nonna. What if the hokey cokey is what it's all about? :eek:Official "Bring back Mark and Lard NOW! or else (please)" Member 160 -
Cheap meals are expensive as hell if they remain uneaten and I have yet to meet a child that ran to the table to eat lentils or boiled swede, so give them what they will eat
Put as many fish fingers in an oven proof dish as you can afford.
Pour over this a tin of tomato soup and make sure it fills in all the gaps.
Bang in the oven as hot as it gets and cook thoroughly.
Spot On !!

Pretty much the same, but I sweat the onions/garlic rather than fry and I throw in some finely chopped celery and then a little later some tomato puree to thicken it up.0 -

My kids love lentil soup and lasagne made with lentils in the sauce but I can't imagine either of them eating the tomato soup/fish finger concoction - I am kinda hoping that was tongue in cheek...0 -
