  • Pre Money Saving I NEVER EVER cooked and lived on microwave meals.

    Over the last six months I have been trying my hand at making meals with ingredients, to save cash and because my boyf moved in who is a big, hungry boy not satisifed by ding-ding dinners.

    After reading this thread I was extra inspired, and have made my own pasta sauce for spag bol tomm night, and a cheesy-mash-bean-pie, which we are having with pork shops on Sat (reduced from £4 to 64p in Asda's frozen section).

    Oh and breakfast tomm is Value porridge oats with dried fruit and some honey, rather than skipping it and munching a sausage sarnie at work.

    Vegetable Chilli

    1 chopped onion
    1 red chopped peppper - chopped
    2 garlic cloves- chopped
    1 mild red chilli- chopped or red chilli flakes
    1 tbsp olive oil
    1 tbsp ground coriander
    can of green lentils - drained
    can of red kidney beans- drained
    can of chopped toms


    Fry onion, red pepper garlic and chillli in the oil covered for 15 - 20 mins.

    Add coriander lentils beans and toms. Mix well. Leave to simmer for 10 mins.

    Can be served with fresh coriander and soured cream.

    Nice with fajitas and grated cheese!

    Just had our cheapest ever evening meal last night.

    Leek and potato soup
    The stock was made from veg peelings and the leeks and potatoes were half price at Lidl
    Cauliflower cheese
    Again half price cauli from lidl and their cheese is inexpensive too (too much cauliflower for just the two of us so half is in the freezer for future use)
    We reckoned the cost to be max £1.50

    Thanks for that. Bought some red lentils the other day and made some of this for lunch - added extra veg too - onion, tin of chopped tomatoes and carrot and potato. Was yum (and I'm not usually a lentil fan!! :D )

    Edit: 100g lentils, one onion, two smallish carrots, one parsnip and one chopped sweet potato, one tin value chopped tomatoes made enough for 3 fairly large lunch portions. :D

  • try this for a cheap warming and filling meal: (makes 2 portions)
    1 onion (red looks pretty but white works well too)
    1-2 carrots
    1 pepper (any color works well)
    a handful mushrooms
    1 courgette
    1 tin kidney beans
    1 tin tomatoes
    1tsp olive oil
    1 clove garlic
    1 leek
    chiili powder
    chilli sauce
    brown rice

    chunkily slice mushrooms and chop pepper courgette leek and carrots into chunks.finely chop onion.crush garlic. soften onion and garlic for a min or 2 in olive oil then add the other veg and cook gently for 3-5 mins. rinse kidney beans and add to pan with tinned tomatoes. add chilli powder and sauce to taste. leave to simmer for 20-30 mins. when cooked serve with boiled rice.
    this meal tastes great and is fab in the winter. the leftovers go well with baked potatoes the following day. feel free to adapt the recipe to suit watever u have on hand.

    OH made "tuna surprise" last night which consisted of:

    Pasta - 10p (we buy the HUGE bags from Asda)
    Pesto - 25p
    Garlic - 2p
    Red onion - 6p
    Mushrooms - 15p
    Green pepper - 20p
    Tin value tuna - 29p
    Dollop fromage frais - 8p
    Scattering of cheese - 10p
    Tomato puree - 5p

    Total: £1.30 for 2 + enough left over for my lunch!

    65p a portion ain't bad.

    We had a cheapy garlic bread with it too, although we can make a really tasty garlic bread for about 35p

    (copied and pasted directly from the "feed 2 for as little as possible" thread)
  • A baked potato with cheese & Beans or Poached Egg on Toast. (All Value ingredients of course!!!)

    Will have a go at some of these recipies though.

    for one

    boil some long grain rice with half a stock cube and mixed frozen veg, when cooked put it in a sieve and rinse with hot water from the kettle, put back in the pan and add chopped chicken and worcester or tomato sauce or microwave some fish fingers and chop them in or whatever you have, surprisingly tasty and filling

    suet pastry [4oz s/r flour 2oz suet water to mix]

    roll pastry out make a rectangle then rather like a swiss roll use bacon and chopped onion as filling roll it up wrap it in oiled gease proof paper you need 2 layers of foil over that to make it water tight then boil it for about 1.5 hours
    mine like it with mash a greens and gravy

    Oooh this took me back! My Grannie used to make this with shortcrust pastry on a tin plate and it was yummy. Wasn't more than probably two rashers of bacon in the whole pie - wartime cooking I would think (she died in 1971). Might have to give this a go sometime, it's set my juices flowing now......

    tesco value 16p pasta with tesco value pasta sauce 36p and only used about half of the sauce which fed 3 of us(myself sis and 7 year old niece)also found jamroly poly in the reduced section for 48p so had that aswell with some value custard which was already in the cupboard.Yummy and just £1
