    Cheap Chunky Soup!

    1 Onion
    5 Carrots
    1 Courgette
    1 Tin Value Chopped Toms
    1 Veg Stock Cube

    Chop and chuck in stockpot just cover with water and leave for 40 mins!

    Very Cheap, Healthy and Filling! (think I originally got the recipie from weight watchers so it must be low fat too!)

    Sometimes I serve it with Value Chicken Breast and Bread for evening meal!

    the good thing is you can just chuck other bits n bobs in - peppers, sweetcorn, Mushrooms whatever you have to use up!

    Mine is layers of sliced potato, sliced onions, sliced cheese and tinned chopped toms layered in a casserole and cooked till it's all soft with a crunchy top. Yum.

    Or casserole made with tinned chick peas, sliced potatoes, sliced onion (fried first), tinned chopped toms, mixed herbs, tom puree and veg stock.

    I've got the proper recipes for these if anyone wants them.

    I think it's easier to make substantial filling meals on a budget in the winter than in the summer. Or maybe I'm just a stodge fiend!

    I absolutely love a very, very cheap meal, similarish to the one above, I layer sliced potatoes and sliced onion then cover with stock and put lots of melted cheese on top. Serve with delicious HM bread. Except that I'm on a diet and can't have much of the bread :( (a 1lb loaf is 22 points for anyone following weightwatchers!)

    Then you haven't met my children

    Lentils, you often can't tell they are there anyway, unless you really look for them, and swede can be mashed in with potatoes for a sneaky extra veg;)

    But having said that, my kids will happily eat lentils and swede even when they know they are there:) and sprouts:confused:

    My kids and I love potato and veg layer bake. Ideal for using up leftovers.

    Fry up some chopped veggies and garlic in a frying pan until soft - any veggies you like, but it's nice with peppers, courgettes and sweet corn. sweet potato add a lovely flavour. add a bit of veggie stock and let it reduce in the pan.

    When the stock has just about gone, then bung it in an oven dish topped with potato - any potato will do - mashed or boiled, or just sliced thinly and placed round the top. Add cheese if you like and then bake in the bottom of oven (200 C gas 6)for about an hour.

    my kids ate this the youngest being nearly one. And it is absolutely yummy

    Steak and mushroom pie
    Enough to feed 2 adults and 2 children

    2 tins of cheap stewing steak
    mushrooms (depends on how many you like)
    potatoes, mashed (Not sure on the quantity of the poatoes, just do enough to cover the top)

    I put the potatoes onto boil, when they are nearly done i empty the stewing steak and put sliced mushroom into a casserole dish. Then mash the potato (with butter and milk to taste) and put on top, put in the oven for about 30 mins on 190/200c.

    I usually serve with roast potatoes and some veg, but good enough on its own. It is cheap and farely quick.

    Hi All,

    Well, I am going to be having some fun over the next couple of months as, due to a recent accident, I am off work and only getting SSP. So, have been searching around for really cheap recepies. The cheapest one i have found is this:

    Red Lentil Dahl

    Serves 4

    500g Red Lentils
    1tbsp curry paste

    Heat some oil in a pan, add the lentils. Fry for 1-2 mins, then stir in curry paste and 1 pint boiling water. Bring mixture to boil, reduce heat and simmer gently. Cover the pan and cook for 15 mins, until lentils are tender and mixture is thick.

    Recepie suggestion was to serve with naan bread and coconut cream (although I am going to try it with value low fat natural yogurt to make it cheaper).

    Just wondering if anyone else wanted to share their cheapest recepie ideas.

    my cheapest meal (and probably most other people's) is the trusty old pasta with tinned tomato sauce.
  • DD doesn't eat red meat, so her 'Shepherds PIe' is tin baked beans, topped with mashed potato and grated cheese (in a hot oven the cheese really does make a difference) add grated onion to cheese for variety!
